I thought I read somewhere that the Michelin guide was initially created in cities where there were formula 1 races. Since they supply tires to so many of the formula 1 race cars, they decided to make a food guide so that people involved in formula 1 could know from their guide where to find the highest quality food, and they have since branched off to other cities that dont offer F1 races.

Many chefs are lazy and less patience to cook things proper outside of China. They want it fast to rank up money, so they just throw stuff in boiling oil because it cooks faster. They don't pay attention to detail to chop/cut things properly, so you get stuff like bbq pork chop into the size of bones. An experienced chef would cut those in slices which is the traditional common practice in China.
Michelin guide is frankly hit n miss. I've had some of the Michelin recommends in Singapore...matter of taste. Frankly I don't think Asian countries need a European guide to tell them what's good or be an arbitrator of "quality" Hopefully a local Chinese guide will come to prominence. Maybe Huawei should start one.
Michelin guide is not just for telling locals where to eat. It's a guide for everyone, local or not. Kind of like a traveling guide. For the restaurants, it's good for business. Just because it has an European name, you sure it wasn't some local Chinese tasters who were doing the tasting, the judging?? You're saying foreigners can't tell good Chinese food from bad? I wonder why then you are watching this channel, watching and listening to a woman from Australia going around tasting Chinese food.

Not necessary. Those should be fermented black bean. The same fermentation can be done to soybean and the chinese product name is the same. However it is fermented black bean traditionally. In southern china where fermented black bean is a famous product, famous brands don't use soybean.

Those trees look like banyan trees! They have an aerial root system so they grow from the branches down into the ground looking for water.

I am from Quanzhou but work in Shenzhen. Sometimes during holidays, I go back to Quanzhou for a few days to enjoy the local food.
It takes a 3 to 4-hour journey by high-speed train.
Quanzhou is definitely the most underrated city, it is full of rich culture and history, you'll need more time there to explore
