      It will be a regretable missed opportunity if the ceiling isnt raised in the kitchen. It will be a smashing room.

      Because its a small footprint, increasing the height of the ceiling would make it feel smaller in comparison whereas keeping the joists in place brings it down and makes it feel like a more cosy space. Also, such a huge volume will be a nightmare to heat in winter especially as they are already struggling with a cold drafty house!

    I am a structural conservation engineer who mostly works with listed structures and would like to give my input on the issues raised in the video. The 'missing' stones at the bottom of the wall are not due to an animal but rather to water ingress. The stone looks to be quite porous (sandstone? Limestone?) and is susceptible to decay when covered up and wet. You said it was already damp in that corner when you arrived and then there was a shower installed in that location which recently resulted in a burst pipe. With this history, it is clear that the stone has continued to decay and as was very rightly pointed out in the video, turned to dust. This is a very real example of why not to use cement mortars and renders on old stone buildings as this is exactly what happens on the inside although not exactly the issue in this situation. In order to fix this, make sure you take all cement mortar and render off from the inside and the outside of the building (and particularly in that corner) then let it dry out thoroughly (2 weeks since it looks like its hot where you live!) Then shore up the wall and replace the missing stones with the local equivalent. Preferably ask a stone mason to come and do it for you as they will know how to not make the wall fall down as they work on the bottom! And also be able to then repoint with hot mixed lime mortar (make sure it is feebly hydrolic and lime rich which is technical names for make sure its not waterproof premixed stuff as it will not help the situation).
    While you are dealing with replacing stones etc, i would like to please point out something that almost gave me a heart attack... the jamb to the door opening at 32:45 really needs to be tidied up and formalised as there is cracking at the bearing of the lintle above which shows that its not happy with the lack of support.
    And then to conclude this very long essay hahahha i will voice my opinion on raising the ceiling in the space. I think it would be good to open part of it for more light and if some of the joists are rotten then why not but i would not recommend removing all of them for the following reasons: firstly, and purely aesthetically, because its a small footprint, increasing the height of the ceiling would make it feel smaller in comparison whereas keeping the joists in place brings it down and makes it feel like a more cosy space. Also, such a huge volume will be a nightmare to heat in winter especially as you are already struggling with a cold drafty house! Secondly, those joists are likely providing some restraint to the gable walls and as such are structurally active members. If removed you might want to discuss some bracing or tie rods with a structural engineer to replace them but this will need to be carefully designed based on the loads and structural actions involved so unfortunately could not be done by yourself.
    There you go i just couldnt hold back haha and if you need any clarifications or advice on other bits then you know where to find me! Good luck with this awesome project you are doing an amazing job! Just make sure you are always doing what is best for the building.

      Thats great thank you,yes I think even if we opened up the floor about we would leave the beams in place still anyway and just look through,unfortunately the french way here is to concrete in and outside of the buildings which does them no good so your constantly batteling with old works to save the building. Luckily the little bakery house has been relatively left alone hence why were wanting to preserve so much of it

    How l love old buildings- look at the brickwork around the windows and door frames ♥️ it’s so sad that we don’t see beautiful details and workmanship in contemporary builds.     Truly admire couple who can work together and these two are admirable the boys are super cute! Totally relate what is like to have a perpetual project. Our house is a Gothic Revival built in 1866 until now we are not done with the project yet still on going. We started doing work in our house before I was pregnant and now our son will turn 13 yrs old next month. Not to mention me and husband both have full time job as well. That's why I admire these couple so much because I know how it is joggling with house project have two kids with pigs chicken and job. Well done you guys!!!!

    33:49 taking the floor out will make all the hot air go up, and it will be so hard to heat the space in winter. may be put down a clear layer of plexiglass or something so that you can have the best of both worlds.

      @@Sgirl a fan in the kitchen will move the flames and make it hard to control the heat for what you are cooking.

      @@folla1545 No, I meant a fan or fans all the way up top of upper floor. Not a big ceiling fan. It wouldn't need to be strong. More like when you have forced air heating or like the fans you have in bathrooms, but pushing the air down instead of pulling it up.. Just enough to circulate the warm air back down. It would be a good 16'' above the stove so I can't imagine it would affect cooking.

    I have lots of those flat tiles, we are removing them from our barn(I'm pretty sure they are the same, you can have a look in my vlog) you are welcome to come and help yourself to as many as you need. Not sure where you are but we are about 40 mins from Chateau De LaLande, 20 mins from La Chatre. Is there a way to message people on here?

    You could always cover the cinder blocks in the connection with some pieces of stone. It would blend the two buildings together & add the stone effect.

      I totally agree and never asks for money. I adore this family and how hamble they are. The others are driving expensive cars and hired a cameraman. Go Dan we love you.

      Yep completely agree... i think in doing it ourselves he managed to paint a door himself which is great but not what i was expecting from the channel... and not enough about the restoration of the chateau. Guess the fame was premature

      But dan and annelise are awesome and are doing such a great job, not to mention how they tech as they go and show us their amazing family! I wholeheartedly agree with their parenting style as their darling boys will grow up with so much experience of practicalities!

      @@Liza03V they are really humble. I don't mind if they set up Patreon or Go Fund Me, cuz I think they deserve it. Proper hard work to make sure the little ones in great home 😊

      @@hacks.b2987 Is a family starting from scratch and doing all by themselves as part time. Dan is a hard working person trying so hard to provide for his family and the only gear that they have is love, respect and hard work. I totally going to support them. And the only think that they want is to live a hample peaceful life with their children. This is the real Doing it ourselves channel. Go family Dan and Analise and lovely kids.
