My grandfather was a Pitmaster in Nevada using mesquite wood as primary smoke fuel, and when he said at the end you gotta be a little stubborn to make it work it rang so true to me. brisket is basically breast meat. its really tough so cooking it can be tricky. bbqing is low and slow which will cook the entire inside without overcooking the outside. alternatively you can put brisket in PHO!!!

I've been on a little journey on YT BBQ vids trying to learn to smoke meats better and i've seen just about every race now show a passion/drive to make some texas brisket/BBQ. each one adding something unique without taking from the core of american BBQ. food really does bring us all together lol.
This is one of the farthest-flung, sprawliest, strip-malliest neighborhoods in Houston (and that's saying something), but there are many excellent spots right around here. There's also "Perky Cups", which is basically Ojos Locos crossed with Starbucks -- it must be seen to be believed -- and there's a true mom-and-pop Thai place "Pranee" that absolutely bats in the big leagues.
I remember when this place first opened - the location is almost cursed so I didn't think much of a place called "Brisket & Rice". I read a local article about being good, checked it out, and it was - fried rice is great, best sausage I can find in town, and of course great brisket. (he's totally right about the Chinese sausage...that plus the brisket is magic)
i play soccer at the fields in front this place all the time and go eat there after. delicious, the best food in houston is usually inside or right next to a gas station 💪🏽

They do. Using an offset smoker and a wok are two significant components to have for a restaurant. And they do it really well.

I always eat brisket with rice. If I feel cooking, make fried rice, sunny side up egg & brisket. I have a side dish of kimchi or achara or pickles.
