    I have been roasting turkeys for holiday for 40+ years. Always turned out marvelously. This video - Oh my Goodness. I've never seen anything like it ( and I worked in great restaurants for many years). My mouth watered during the entire process. It looked so amazing!     It has been a lesson. I have get the ingredients, even the expensive ones ( turkey, cognac) and I spend nearly 11 hours since I started till finished it.
    But tomorrow we will have a very traditional dish from the States and other parts of the world.
    I will follow you in the next recipe.

    Ça a l'air super bon ! J'ai trouvé une recette ailleurs où il y a des légumes dans la farce, mais je pense que dimanche je vais plutôt suivre la vôtre et servir les légumes à part. En tous cas, merci beaucoup pour ces explications très détaillées et un grand bonsoir de Bourgogne.

    Had to write down the stuffing recipe -- it sounds to die for. I've seen all these techniques before except the stock-soaked rag. That's a new one on me -- have to try it.

    Dear Chef Eric, during preparing the gravy, is the fire is on low heat, medium heat or high heat before the chopped sage leaves and apples were added into the gravy ? while the chopped sage leaves and apples are being prepared, leave the gravy on low heat, then after added sage and apples, is the gravy still maintained on low heat, or should we change the heat temperature ? thank you

      It looks like in the beginning it was on medium to cook the raw flour but once the wine had been added and reduced he backed the heat down.

    Personally, I don't think I would want walnuts, cranberries, or raisins in my stuffing. But I would love to try pork stuffing! Bread stuffing is my personal favorite, though!

      I've never had a Thanksgiving stuffing with cranberries in it but I will be willing to give it a shot.

      Hey Eric…. Merry Christmas & Happy New Year. Oh yes, I did roasted Chicken use your recipe and its turn our amazing. To be honest I only able to taste small sample piece from the chicken. In blink of eyes the chicken gone and my friends enjoyed very much. Again… Thank you for shared your recipes here in RUclips and its help people like who learning how to cook.     Your way turkey will have dry meat. Butter does not make the meat juicy.
