My gramma made an easy casserole that I often make too. Cook a pound of elbows . Rinse and pour 1/2 in a 9”x 13” . Pour a can of creamed corn on top. Add the other 1/2 of elbows, then a can of creamed corn and a can of whole kernel corn. Now put saltine crackers on top covering it . Add a dollop of butter on each cracker. Then add a cup of milk , pouring it over the crackers. Bake at 350 making sure all the butter melts and it is bubbling on the sides. Gramma survived the Great Depression by having a root cellar stocked with meat , eggs , fruit , veggies and soups she had canned . They had a garden , chickens, rabbits and Grampa’s brother hunted and gave them venison . Some of their neighbors weren’t prepared so they helped them. With food on hand, some government rations and being a great cook they thrived compared to others that were in survival mode. Brooke , I love that you are teaching us that inexpensive food can be made tasteful. Love your beautiful family.

Anyone I know who, like me, grew up in the UK right after WWII does this. The ration of butter per week was so little you had to conserve every scrape. Frugal people I know still do that.
A good casserole I make (and my mum made)...cut potatoes 1/4 to 1/2 inch thick and line bottom of casserole. Next later chopped celery. Next layer sliced onion. Next layer ground beef. Next layer green pepper rings. Next layer a can of crushed tomatoes. Top with a few pepper rings. Bake at 350 1 1/2 to 2 1/2 hours covered with foil. Take off foil and bake another 1/2 hour or so. (Depends on how big you make it) poke to the bottom to make sure potatoes are cooked. VERY good...easy...and inexpensive. You can season with crushed red peppersl if you like spicey, and sometimes if I have leftover green beans I throw them in. Also sometimes I make an extra layer of banana peppers.
You should write a cook book! You make the best food! And would be nice if you could write some encouraging messages in your cookbook! Your videos are very helpful and encouraging! You are blessed with a wonderful family! God bless all of you!
Casseroles are the best ways to feed a family economically. Saturday was empty the refrigerator throw it in a dish You had a casserole. Just add white sauce or a can of soup. Some of my favorite meals were these casseroles on Saturday. They really never were the same.

Another great potato recipe is Sinful Potatos. It is a bag of the cubed potatos and 2 cups shreaded cheese, sour cream, minced onion (seasoning), can of cream of chicken soup, salt , pepper, stick of butter. The topping is corn flakes crushed in melted butter

They are also called Funeral Potatoes. In our family we call them Cheesy Potatoes. They can also be cooked in the crackpot to save oven space. We love them and they go with so many things!

And they are as staple a meal as eggs and toast or sandwiches for lunch boxes. ; ) Every single person I know has about 10 tried and true, solid, every-potluck-you-go-to, great grandma's recipe hotdish. I make something similar to your Mexican chicken butt I call it dorito chicken😊 Another good casserole is tater tot casserole! Ground beef and onion cooked and drained, cream of mushroom and cream of celery soups put on top of meat, then place tater tot’s on top. Bake at 350 till bubbly and brown!🤤

Girl we love cheese too! I've seen lots of breakfast casseroles before but never one like this one with sausage gravy and biscuits! That's my absolute favorite thing to eat and when I saw that I said oh yes you just became my new best friend! I'm absolutely getting the stuff from the grocery store to make that ASAP! When I discovered your channel and started watching you early this summer, I was in a very different place financially and while I enjoyed watching and taking notes for saving money on my grocery budget, it was for fun mostly. Today, things are much different, and I am utilizing all your tips and tricks to get food on the table and full of flavor too. I just want to say thank you again because today I was able to pull together a nice meal for less than $4 and it had cheese in it! I already had a half pound of ground beef on hand and was looking for a way to stretch it out. By the way, you look especially pretty today. I think it's the pink eyeshadow and those adorable buns in your hair, anyway, you look really cute. That color top is nice on you.
My mom used to make a casserole using 3 cans of hominy (drain 2 cans), a jar of Cheese Whiz, a stick of butter, and a small onion chopped. Sauté onion in butter. Add Cheese Whiz to hominy and stir in onions. Top with crushed corn chips and bake on 350 til bubbly. It was soooo good!
That biscuits and gravy casserole is our Christmas morning breakfast, it really is yummy!! Pretty good leftover, too. Yes, your gravy is beautiful, lol. 😆 Great video!

Breakfast for supper is living the life, especially on a cold dark winter night when the sun goes down at 4 dang afternoon. Once a month or so I make a big casserole on a Saturday and eat off it for days, they're not just for families. It's like a food hug from mom.
Happy to see some new casseroles I haven't tried. When you said about using your dehydrated taters I was like yes! I have them, bacon bits, homemade ranch and some canned cheese to make a meal kit for my next Emergency meals box. I'm going to do a chicken casserole kit too as well as my childhood favorite tuna noodle.
I made your spaghetti noodles cooked in marinara sauce and water. then stirred in the 5 slice of American cheese. My Son and 3 grandchildren loved it !
I love your recipes! I did something similar today. I took a pint of turkey that I had pressure canned last year because we got a free turkey for Thanksgiving, but no additional freezer space. I stirred in a can of cream of chicken, a cup or so of mixed veggies and put that in the bottom of a casserole dish. I topped it with 2 stove-top stuffing mixes that I made by package directions but added some sauteed onions and celery. Baked it at 350F for about 30 minutes. less than 20 mins of prep time and it's like Thanksgiving in a bowl.

We like cabbage and cheese casserole. Steam cabbage till soft brown ground sausage or link cut in rounds, rice, can of aged cheddar cheese, 1/2 can of milk to get all the cheese out mix with cheese layer cabbage meat rice or just mix it all up. Pour on cheese bake 350 till bubbling. Sprinkle grated cheese on top. Bake till golden. You can put other stuff in the casserole chicken, onion, turkey whatever you like.

I've read a tip that I should do myself. Save the stick butter wrappers,keep them in a freezer bag in the freezer. You can grease pans with them!

I add leftover shredded or diced chicken to hash brown casserole sometimes. It's tasty too.

I love casseroles. I was raised eatting casseroles because my father was from Southern Carolina. So, we eat blacked eyed peas, Lima bean. cornbread etc
I make a similar casserole with the hash brown potatoes but it includes cream of chicken soup too. Us up here in the north call it funeral potatoes.

We like cabbage and cheese casserole. Steam cabbage till soft brown ground sausage or link cut in rounds, rice, can of aged cheddar cheese, 1/2 can of milk to get all the cheese out mix with cheese layer cabbage meat rice or just mix it all up. Pour on cheese bake 350 till bubbling. Sprinkle grated cheese on top. Bake till golden. You can put other stuff in the casserole chicken, onion, turkey whatever you like.
