    ABOUT ME
    By the age of 6, there was early evidence that food would play an important role in my life. Practicing penmanship and kitchen creativity, I co-authored my first recipe, “Ham Slam”, with one of my older siblings. It had all the makings of a classic 1960’s American kitchen treasure, featuring gourmet ingredients like Campbell’s cream of celery soup and Durkee’s canned French Fried onion rings. It’s no wonder my culinary career promptly took a diversion until around the age of 40.
    But spending years as an executive in the business of marketing brands such as Apple, Microsoft, and Sony Pictures didn’t snuff out my lifelong passion for travel, food, and wine. I eventually found my way back to my culinary roots when I turned my attention to studying technique at Cordon Bleu Paris, exploring new foodie concepts around Europe and documenting them in words and pictures.
    I’ve been privileged to pen articles and columns in many publications, including the Food52, Huffington Post, msn.com, Zester Daily, Santa Ynez Valley Journal, Michigan BLUE Lakestyle Magazine, Olive Oil Times and Olive Oil Source, the world’s top-ranked olive oil-related websites.
    In the process, there was one more thing I learned. Despite the explosion of global cuisines in restaurants all across the U.S., you can’t fully experience the wide world of flavor all from your own backyard, Toto.
    Following that thought put me and my partner, George on a plane to Alicante Spain in 2014 where we have lived ever since. Our mission is to explore the aromas, ingredients and collective imaginations that are all part of Spain’s vast culinary heritage.

    Would love to see a video of each, recipes for breakfast on one video, for lunch on another video, and dinner video. I’m not as talented as you and putting things together on my own, yet. But would love to see some recipes for each meal to get started. Thanks.

      I second the meal-specific videos. Sounds great. I personally appreciate simple recipes with just a few ingredients. Labor intense cooking just isn’t my thing in my “dotage” or 71! I’m always happy to see a new video from your kitchen.

    I really like the fact that you are experimental and not overwhelmed with the recipes. Indian diet has all these ingredients but the oils we use are mostly unhealthy. And of course, too much sugar! Thank you for sharing!

Indian food is one of my favorite types of cuisine, I eat it almost every week using healthy fats and lots of spices and no sugar actually. Love pakoras and biryanis. Lime pickle is one of my very favorite condiments. So in reality, I can eat the Mediterranean way from pretty much any cuisine in the world! Cheers, Caroline

    😭 I love homemade mayo with olive oil though.
    I do love this video. Full of good tips. I wish all these fast food places weren't such a go to for so many here in the UK. I think people need re-educating around food. I just love the variety of the Mediterranean diet and like you I do love a little dark chocolate but sometimes even milk chocolate. I'm still transitioning and have been for months now but I love a treat at weekends and the summer here has made me reach for ice lollies and ice cream just to stay cool in the evening after dinner.

    Do you have a video on using the air fryer for quick healthy Mediterranean meals? I just bought one a would love healthy recipes.

      Hi Janet! Great minds think alike...I just added this to my future video list. In the meantime, my video about air fry salmon with roasted veggies is something we do almost every week because it is insanely easy. You don't have to make the pistachio crust though. I just douse the salmon with plenty of seasoning like Tajine brand and it is just as tasty. Plus just baby potatoes cut in half is another simple option if you already have prepped veggies. I am a recent convert to air frying and I love it. Cheers, Caroline

    The one thing I haven't really done on the Mediterranean diet is the fruit for dessert thing. In season fruit like figs are wonderful though..yep from a long line of chocoholics. I do keep my portions very moderate.

      Gosh, Jay, you tapped into one of our favorite fruits that we grow in abundance at the farm - figs, figs and more figs. It took a while to get used to the idea of fruit for dessert but I got there. And chocolate… well I’ve never met a piece of dark chocolate I didn’t like!

      Hi Irene - I have made a few videos showing the Thermie, ultra-creamy hummus, mashed potatoes and flatbread, but I realize that not too many people own one because of how expensive they are (although I absolutely love mine and use it all the time) so I’ve relied on channels that are dedicated to Thermomix recipes and there are some good ones out there you might investigate too. I will continue to show it from time to time but want to be respectful of what’s in most people’s kitchens. I hope you understand my thinking. Maybe I could do just one video that would be a review though…I’ll give it some more thought since you asked. Cheers, Caroline

      Yes, actually it is part of my first video (so please excuse the less-than-professional looking style!) and you can find it in the video about oven roasted mussels. I guess the simplest way to locate it is to scan through the list of my videos by oldest to newest and it is the oldest video on the channel! Can’t wait for you to try them, they are simple but oh so tasty! And of course can be prepared in a refular oven the same way. Stay cool and keep having fun in the kitchen. Cheers, Caroline

      We are traveling to Italy for our 40th wedding anniversary and would like to come to Spain. What is the best place to go to experience the open market’s and real Mediterranean living?

      @@hazydays7558 Hi Hazy, if it’s a short stop before or after Italy then you might enjoy Barcelona, Gaudi’s architecture is amazing, great neighborhoods for tapas crawls, the Sagrada Familia is awe-inspiring and the mercado in Barcelona is not to be missed, although the one in Alicante is quite nice too! Real Mediterranean lifestyle might truly be best in the area I live in, along the Costa Blanca. There are some smaller towns along the coast like Altea that would give you a slice of the old style streets and Alicante has some wonderful sites including the castle and the beach and great restaurants. But of course, it’s all bsed on time. One of the travel benefits of Alicante is that the airport is 15 minutes from city center and the train station is in city center with high speed access to most places in Spain. I hope you enjoy Italy though and hope you are going to Florence, one of my favorite cities! Happy anniversary and cheers, Caroline

      Hi Doris - I just looked it up for some ideas and it appears that in the US (if that’s where you’re from) Albertson’s, Trader Joe’s, Whole Foods and, of course, Amazon but there might be other grocery stores that carry it too. It’s worth the fun hunt for this ingredient. I use it all the time…even last night on some pan-seared salmon.that gave it just that little bit of citrusy brightness! If you are one of my Australian pals, then the best I can suggest is to ask around since I’m not familiar with shopping options but Amazon would be a pretty good bet. Cheers, Caroline
