Why are you taking a bit of the coffee grounds out every time you dose the coffee?
✨ The coffee recipe requires 23gr dose of the coffee ground, and most of the time, the grinder is being inaccurate, either giving me too much or too little, so I have to scoop it out :)

I only just found your cafe vlogs and have watched a couple of them already and its SO GREAT. I'm watching this at 2am because I can't sleep and for some reason its actually very therapeutic and really calms my nerves, thoughts and anxiety. Hey Laura! What is the brand and model of your coffee scale you use after dosing?
i have a couple of questions.
1. how long did it take for the business to start getting customers when it was new.
2. how many drinks do you sell typically in a day
3. what's the typical shift hours.
I don't think it was the grinder that caused over extraction, if the burr was in normal condition, it could be the scale buildup in the water inlet with that flow restrictor in the machine, the first drop out of those over extraction shots were fast, then the rest of it was bit of slower.
If coffee making was an art form! Then you exceptional! Keep up the good work! Your vlogs for some reason or the other have a very calming effect on most of us!

in addition to the grinder, would the tamper also cause over/under extraction? Maybe not since it seems like an automatic tamper but i wonder if they need to be re calibrated every now and then
As long as it's at the same pressure it shouldn't have any effect. I use the same modal in the shop I work and it's clear enough on the side. Grinders are very finicky

I've worked for bosses like this. He needs to have this busy work set up before opening, NOT During. No, he's not helping. Stay out of the way and let the barista do their thing. The barista will let you know when and if they need help.

That’s not a grinder, that’s a put press. The grinder is a Mazzer, it needs some adjustment or minor repair.
