The best part about brining is that you don't have to stop at just salt. You can add herbs, aromatics, and vegetables to it and really take the flavor to another level. I use carrots, celery, onions, peppercorn, fresh thyme, and fresh flat Italian Parsley. I brined my chicken then cooked my rice in the brine afterwards; it was the best rice I ever made.
