I will bring you back to Korea today with these coffee buns which are extra soft and delicate brioche with a buttery coffee topping that turns into a subtle coffee crust once baked. Just out of the oven, give it a bite and you’ll honestly feel like in heaven! With a glass of milk or a cup of coffee, they are the perrrfect breakfast or tea time snack.
There is just the right amount of coffee to be able to taste it without feeling like you’re drinking an espresso.
The coffee scent combined with a freshly bake brioche smell spread all over your kitchen. Whether it’s 12 or 9pm, trust me you CANNOT resist and won’t wait after lunch or after dinner to have it : )

🌸 INGREDIENTS (10 buns)
340g (2 cups or 12 oz) brioche flour
40g (3 tbsp or 1.40 oz) caster sugar
3g (⅓ tsp or 0.10 oz) salt
7g (¾ tbsp or 0.24 oz) instant yeast
180ml (¾ cup or 6 fl oz) warm milk
50g (½ butter stick or 1.75 oz) unsalted butter - room temperature
cling wrap
baking paper
Coffee topping:
15ml (1 tbsp or 0.50 fl oz) warm water
9g (2 tbsp or 0.30 oz) instant coffee powder
90g (¾ butter sticks or 3.15 oz) unsalted butter - room temperature
75g (⅓ cup or 2.65 oz) caster sugar
70g (2.5 oz) egg
105g (½ cup + 2 tbsp or 3.70 oz) regular flour
