Finally someone cooking taco meat with water! It's the secret seriously and so many receipes don't show it. The recipe I got from one of my latino friends was to literally add the water into the raw ground beef and break it all up. It results in a very soft meat like you'd get at a street taco stand.
So I decided to do it exactly as you instructed and it was awesome But the second I did it I added Chipotle peppers to the mix to really spice things up I highly recommend it
This is close to what I make but I start with frying a diced onion until they're sweet then add the spices so they can cook in a little bit of oil that is in the pan for the onions because some spices are oil saleable and you need to introduce oil to properly released their flavors and I add the meat searing it because the sear is the beef flavor. And when almost done I add two tablespoons of tomato paste mixing it in and cooking it until it's a rusty brown color. Then taste for seasoning and serve.
That's what I do. Usually right after I stir in the spices. Alternatively, an 1/8th of a teaspoon of white vinegar towards the end gives it that bit of acidity.

I'm sure it's safe but that chunk avoided SO MANY stirs with his plastic paddle through the whole video. I thought maybe at his angle he couldn't see it, but his arms are at an angle that disagrees that his eyes were lower. When EVERYTHING else is golden-brown nicely, that one pink chunk really sticks out lmao
This is pretty much how I make my white people taco meat with one exception. Either some tomato paste right after I stir in the spices or, if I'm in a hurry, an 1/8th of a teaspoon of white vinegar right at the end. The acidity really wakes it up.
I cook the beef first, then drain it, then add 1 Tbs or so of Taco Seasoning, Salt and pepper, onions or onion powder. Add much less water than he did.
I know this is old but generally. Just get an low fat count meat if you are doing this. If you are doing like a cheap meat that's like less than 80/20 Meat to Fat. Almost guaranteed you will have to drain some of the fat. Don't just dump it all away. Save it or use it for cooking and keep some in with the meat but it can be too much and ruin it. Any leftover fat is great to add to stews and soups or basically any noodle dish. Even throwing it in with your rice.
Just so we are all aware here.. this is white people taco meat.. Mexicans do not make tacos like this... We literally use every other meat except ground beef

Adding water is a bit redundant-all you’re doing is boiling the meat and spice that you already cooked and giving it a goopier texture. If you’re not cooking with liquid, you should be adding flavour with it.

You should add about a half teaspoon baking soda to the raw ground beef to make it more tender and juicy.
I like to add mexican oregano to take it to that next level and give it some fragrance too.

This is how I do it, but I just use Mccormick original seasoning and add some green onions to the meat when I add the water.
