i just got a set for $3.99 at a thrift store, i spent a couple days polishing out the dings and sharpening them. i looked for a video on how to carry them, like holsters, but that shirt made me click and you instantly taught me to block on the side. excellent video

So regarding the blocking part, you do mention trapping weapons in between the prongs etc, but most of that part is spent talking about holding the weapon in some form of reverse grip. Wouldn't it be much better to always hold it in a forward grip so you can actually use the pointy end and the extra reach? And wouldn't it be really easy to slightly misalign your block causing a sword to either take out half of your arm on the left or right side if your arm? So basically that the sai blade isn't perfectly between your arm and the blade causing you to still get cut.

I am a second degree black belt in taekwondo (training for third in december) and am looking to create a sais form for demonstrations, tournaments, etc. are there any moves/strikes you would recommend? I just started sais and i’m the only person in my studio that is looking to explore the weapon.

The "farming tool" claim is a dubious one. Might have a hint of truth burried somewhere, but historical records show these were common police weapons in southern China and Okinawa, and the jutte, which is basically a 2 pronged sai, was used in mainland japan. What kobudo system do you train? You use some grips Ive never seen used before.
I'm not surprised why outsiders are so influential on film as a reference material. This is because pop culture builds a community culture. However, the truth is, sai is a true weapon, not a farmer's tool that most people tell us. Sai is a real weapon that was used by warriors in the past as far back as the era before the Sri Vijaya era, the use of iron in that era was widespread. Japan's Okinawa timeline is later compared to the Iron Age. This is because at that time the Sundanese continent formed a kingdom and culture for more than 30,000 years. Sai, on the other hand, has spread to several countries after the great flood that followed. So sai is not originally from Japan, please look at other countries in the Malay Archipelago.
If I buy a pair of real sai and try to practice what I see here and in other youtube vids, what are the chances that I'll accidentally hurt myself? How badly do people get hurt while just practicing with sai?

Not the way to use the Sai ,also that pair Sai is a junky pair .It is better to invest in a quality Sai,then to waste money on a pair that is substandard Also if you are interested in actually learning proper use of the Sai you should seek a competent instructor..
