If you live in North America, you have most likely come across Miyoko’s butter “made from plants.” Miyoko has a few different products mimicking dairy, but her European-style cultured vegan butter and the European-style cultured unsalted vegan butter are probably the most popular.
The unique thing about Miyoko’s butter is the simple ingredient list. - coconut oil, cultured cashew milk, sunflower seed oil, sunflower lecithin, and salt. None of the ingredients commonly found in the popular vegan buttery spread Earth balance.
Because Miyoko’s butter is cultured, it has a unique, slightly tangy buttermilk flavor. The texture is similar to regular butter, but it’s firmer and crumblier when cold and goes soft quicker at room temperature. This makes sense since the main ingredient is coconut oil.
This cultured vegan butter, inspired by Miyoko’s cultured plant-based butter, is great for spreading, cooking, and baking. It’s entirely vegan (dairy-free), gluten-free (grain-free), and soy-free.

I’ve never tried Miyokos cultured vegan butter. Too expensive, so I’ve been using Earth Balance Organic Vegan Butter. I tried this recipe. Followed the directions, with the exception of adding a teaspoon of nutritional yeast. It is very good👍🏽🙌🏽. I don’t have a Vitamix blender. Used an immersion blender instead and it produced a creamy, well blended “butter”. I also did the “quick soak” method by pouring boiling water over the cashews and letting it soak for an hour. That worked well, too, to soften the cashews rather than the overnight method.

I want to thank you for another excellent recipe. I STOPPED buying vegan butter altogether and only use this recipe. I have gotten creative and took half the mixture and mixed in garlic and herbes. This tastes identical to Miyako's but a lot cheaper. It freezes well too! I have one question where did you get your mould? I used a larger cube silicone tray but I would prefer the sticks. Also is your mould the size equivalent to a stick? Thanks again.

@@sussirodriguez1705 Yes but they all seem to be for hemp butter. Is yours close to a regular butter mould? Is one stick closest to a regular stick of butter?
Since I’m allergic to “moldy” nuts (cashews, peanuts, etc), I’ve used almonds instead, per Mimi Kirk’s recipe (for cultured almond “cheese”). I bet almonds will be just as good 😋❓❓
You might need strain the milk/cream if you use almonds. Cashews blend completely smooth whereas almonds don't ;)
DEFINITELY almonds need straining in a nut milk bag 😜 they’re very gritty compared to wonderful cashews

You can use either or. These cashews were labeled raw, but I doubt they were truly raw. If I want truly raw cashews, I get them here: nutritionrefined.com/really-raw-cashews (affiliate link).

Can you use a different oil besides coconut oil so I don't get saturated fats when I have high cholesterol?
Coconut oil solidifies in normal , cold temperatures ..... That's a good question .... Maybe ask your doctor

You would use it just like regular butter. The cultured butter is just slightly tangier (depending on how long you let it culture).
How long does it last in the refrigerator?
For up to 7 days in the refrigerator and 3 months in the freezer.

Did you soak the cashew first or use raw out of the bag?
Warning! I made the horrible mistake of wasting $15 on a jar of Nutiva "buttery" coconut oil! The most disgusting stuff, doesn't taste anything like butter at all! So pissed. I have to throw it in the garbage for fear of anyone in my family using it for our food. Tastes like a perfumed hand lotion rather than a buttery oil. Definitely stick to regular unflavored refined coconut oil.
And no, it's not rancid or old, it's brand new with a long exp date, it didn't have any type of rancid taste, it was the dreadful annatto extract and whatever ingredient they're hiding calling it "organic vegan butter flavor". It also gave me upset stomach after trying some on a piece of toast! I'm vegan but on a very tight budget, so this is extremely disappointing. Maybe people forget what butter tastes like after being vegan, but this is NOT it! The plain cashews taste like butter on their own. I could have bought 2 bars of the real thing with that amount of money. Luckily I made a small test batch and it ruined my cashew butter, so it doesn't get fixed by the cashews either.
