    For the fish, I like to use a cast iron pan.

    Blacken red fish little different down here in Louisiana. It did all looked good bud. We use a cast iron skillet get it really hot throw unsalted butter in then throw your fish in your more or less flash frying the fish make sure the fish is coated well with blacken seasoning and have the pan hot and do it outside on a burner.

      We cook blackened redfish outside in a huge cast iron skillet on the crawfish cooker. Flames and tons of smoke are involved

    Just like fishing, it is good to see how others cook after the hook. Crawfish season is coming. Will have to try this (I’ve done similar with shrimp). If I “hydrated” along with you, I might be able to smell the cooking, too!
