Were these reds, bled and scaled prior to filet process ? And what is best way to remove slime on scales, to make holding more manageable ?
No they were not bled nor scaled. Just rinsed with a water hose.

After you filet it and cut the bone part, you don't keep it? The belly is not good?
I am sure it could be eaten but not enough meat around the bones and belly for the trouble
