There is 2 version of the end story "key moment: car and a tree" 1) what we saw from the start till the car scene with the doctor. 2) Akash (the blind) telling the climax part. You can see clearly the two different shots taken barely noticeable. Akash story always has a hole throughout the movie. Blind guy saved by a blind rabbit from getting ran over by a car. Since he is blind how would he know about the rabbit and also has a cane with a rabbit head ?? They made that Europe location scene perfectly to deceive us from the different versions of the same story😂
Akash was not blind. A blind person can never forget his stick. How can a blind person see how the rabbit jumped on the car? The second story is made up of Aakash. Also on his stick, a rabbit was carved so he referred to a rabbit. Hope it makes sense now.
I didn’t watch the full reaction till now, but you missed the part why he acted blind. He tried to find more focus and sense as blind and it's true that blind persons are more focus because their other senses work anyhow. It helped finding him good music and perfectly combined. That's why he was pretending blind. But he obviously didn’t know what'd be the consequence after this.
The ending is just an open one. We can interpret it as we want. My interpretation is that the story that Akash told Sophie in Europe is totally a lie. If you see carefully, the handle of the stick that he uses in Europe is that of a Rabbit. If the Rabbit hitting the car had really happened, how would Akash even know that a Rabbit saved his life, because he was blind then and could've never seen the rabbit. What would've actually happened is that he took the doctor's advice and replaced his corneas with Simi's. The doctor dying, the blind rabbit and Simi's car accident was just a story that Akash made up. The Rabbit handle on his stick signifies that it's just a cooked up story. The Rabbit story never happened.

This type of ending called open ending where director left the decision on the audience that what actually happened . Here is my point of view and also most of audiance pov- the last scene what the main character was explaining is totally imaginary he actually took off eyes from that evil woman it was just a made up story to continue his blind acting. I'm not good in English so if there is any mistake manage it.
Ending explained:- Actually Akash did get the eye from simmi as according to the doctor's plan. and the simmi's death scene (car explosion) was fake, totally made up by Akash. Because how Akash know that it was rabbit who saved him. As we were watching that scene according to Akash perspective,there is no way he knows rabbit saves him (and he also get that rabbit design on his stick). So he and doctor were successful in their plan.and he did get simmi's eyes. It's just he's acting again to be blind.
