Thanks for posting this. I worked as a Caregiver for the Elderly for a while. I cared for this 90 year old Itallian Gentleman. He made his Mother's Meatballs. He used Beef, Pork Sausage, all that you used, except no Italian seasoning, but Fennel Seed and Anise Seeds. They had that Itallian Sausage flavor. Oh gosh, they were delicious. He baked them, then cooked them in Red Gravy. They would make a good girl go bad!!!

Are these able to freeze for 1 month? Not that we'll need that long? Amazingly delicious looking. BTW that's not milk, that's heavy cream!!! We still get the point!!!
Kinda how I make mine. Meatloaf also. I don't do the French bread, bullion, milk part. I use pork rinds (crushed in food processor) instead of bread crumbs. Daughters went through a keto phase & it stuck. Yummy!
That sounds lovely..I like my meatballs to be meat. Sometimes I will put grated potatoe in meatloaf of grated apple or carrot ...but for meat balls all meat is the best. I'm gonna try this although it will be extremely hard to get rinds in the balls without me eating them.

I have developed two secrets for my meatballs that I highly recommend... I use lean beef, lean pork, and mortadella. A flavor secret of mine (not so secret anymore) is cooking onions in a can of beef consomme until nice and jammy and incorporating those into the meatballs. The ingredient came about after incorporating a little left over French onion soup in a meat ball just for the hell of it, but turned it unironically amazing.
So cool to find out you were a chef at an Italian restaurant for so many years… My Sicilian half on my mother’s side approves LOL And damn those meatballs look amazing!! 😋
Love your work Kevmo but could it be possible that these are Italian American meatballs? The Italian meatballs I know from Italy are called polpette and have beef, parsley, garlic, salt, pepper, grated parmesan, breadcrumbs and egg. Give it a try sometime and keep up the great work!
I like making my own too bc I can make em bigger than a premature pingpong ball lol if I go all out I mix chuck, pork, and veal 🍝 sometimes though I just want fully cooked (nice and easy), but no matter the brand or store... You just can't find any decent sized meatballs in the frozen section (hell, not even refrigerated/fresh).
I used to work at a place called Tony's Pizza in Long Branch New Jersey and that is exactly how he made his meatballs except we waited to the bread was really hard and we made our own bread crumbs and then who is a little bit of garlic parsley two green peppers one red pepper and a little bit of cheese and then we put them in the oven in these big long trays and then out came these meatballs and they were fucking slamming and now that you made them fresh my memory now I'm going to go make them
I use Pecorino instead, but i made these tonight , but it's not from your recipe, but it's pretty much the same besides switching the cheese. They were great, and i would tell anyone to follow hus recipe, although i prefer Pecorino 😂

In Italy they are typically smaller and slow fried in olive oil then cooked in sauce for 3-4 hours. These look delicious! Well done.
