I let the eggs cook a little while on med-high heat until the base of the whites crisp, then place a lid on top and turn off the heat. The residual heat/steam will finish cooking the whites on top. I'll give breaking the tops of the white a try as well. Never flip the egg :)

Hello Byron, I'm a big fan of your channel and recipes, one of my favourites of all time is the "Sloppy Joe Sliders", that was the first time I heard about Sloppy Joes, and it's the only way I cook them. I think it's a great idea to bring back the "theme weeks" How about "Mexican Food Week" with your version of chilaquiles, birria, fried fish tacos etc.. ? How about "Sandwich Week" with your take on Philly Cheese, French Dip, Buffalo Chicken etc..? Just some ideas, hope you give them a shot! Best regards
Butter basting eggs is how my grandmother made eggs. She would always have trouble flipping them over so she began basting the top with the butter or oil at times.

poaching time can be saved by straining some of the whites through a ladel with holes, no need for vinegar or spinning vortex. After straining some of the egg whites place the egg in the water and finish. youll have the perfect poached egg without extra whites or the need to have vinegar
Huh? Who knew my moms been cooking like a champ since the 60’s. I don’t drizzle any chili sauce over my poached...but she taught me all these & to “butter baste” my eggs and that’s just my normal cooking, so I don’t worry about cracking yolk flipping them over. And for extra flavor, on the weekends, no butter, bacon grease.
Shoutout to my well fed, free ranged, organic, backyard, happy chickens for the eggs. My girls are the best!
