The Real Recipe of Moroccan Couscous with Caramelized onions. Easy ingredients and easy clear steps!

The Moroccan couscous is the king of the Moroccan food, extremely delicious, Moroccan Couscous is so addictive with all the amazing taste that you get from the mix of meat, vegetables and Couscous.
Today we will prepare is 4 easy steps :
1- Preparing the meat
2- Preparing the vegetables
3- Preparing the caramelized onions that we call Tfaya (it's optional, you can prepare couscous with vegetables only and skip this third step, but if you love the mix of sweet and savoury and this is for you)
4- Preparing the couscous itself (the traditional way)
Let's get started :
1- Preparation of the meat :
I have used for 500gr Of couscous semolina, 1.2kg of Couscous and this is more than enough, 800gr or 1KG is enough.
I prefer to use lamb meat to give me the best taste, and this is my own preference if you don't like lamb and your prefer to go with the beef you can do it too.
Here I used a lamb shoulder, you can use a leg as well both of them are good in Couscous.
The spices needed : Salt & Pepper, and 1 Table spoon of Turmeric
We will need 1/2 cup of vegetal oil, 1 big bouquet of cilantro, as I mentioned in the video cilantro with good quality of meat is the secret of a good couscous.
And depending of how your pot is big, I used 2.5 Litres of water.
Cook the meat in an pressure cook for 30 to 40 min then we will start adding the first batch of vegetables.
2- Preparation of vegetables :
This Couscous we also call it in Morocco 7 Veggies Couscous, because we use 7 vegetables at least to prepare it.
For the first batch of vegetables, you will need : 2 Tomatos, 2 Onions, 3 Turnips, 5 Carrots and 1 bouquet of Cilantro
Add them after 30 to 40 min of cooking the meat (in a pressure cook, if you use slow cooking then you will need to wait more than an hour to start adding the vegetables)
The second batch of vegetables, 5 Zucchini, Pumpkin 400gr (you can use Butter squash it's perfect as well), you can add peas, 1 big sweet potato, depending what vegetables are available. If you like spicy food, you can add fresh chili peppers on the top and remove them as soon as they are cooked.
you will add the second batch of vegetable after 20 to 30 min, you will need to make sure that your meat is cooked properly, because the second batch of vegetable will need only 10 to 15 min to be cooked.
Make sure when everything is cooked to taste your sauce, if it needs salt or pepper and if you are satisfied with the colour or if you still need to addd more Turmeric.
3- Preparation of Tfaya ( the caramelized onions)/ Optional step
4 sliced onions + Salt & pepper + 1/4 teaspoon of ginger powder + 1/4 Teaspoon of turmeric + Cinnamon + 1/4 teaspoon of aged butter (Moroccan smen) don't use it if you don't have good quality of spoon + some saffron Filament (I used the Moroccan Saffron from Taliouine)

1/4 cup of a vegetal oil + 1 cup of water, 1 small bouquet of cilantro and 2 tablespoon of sugar that will be added at the end.
Cook on a medium heat and mix every 5 min until you get a brown colour than your onions are ready and you can remove cilantro and add Sugar, mix for two minutes then your Tfaya is ready.
4-Preparation of couscous the traditional way, I don't like to use express couscous because it doesn't absorb the sauce and it's very watery, that's why I use the traditional way using the semolina even if takes more time to prepare it. (I used 500 gr)
I like to mix whole wheat couscous semolina with the white one I find it more delicious and healthier, if it's not available, no worries, it's still gonna be tasty.
The first step is adding a teaspoon of salt and a tablespoon of vegetal oil that we mix all together with the couscous, then we start adding water around 1/4 cup of water that we add slowly until it's well absorbed by the Couscous, then we let it rest for 10 min.
Second step, we boiled water in the steamer, we mix the couscous a second time and we leave it in the steamer until we have the steam coming all over the steamer as showed in the video.
WE we have the steam coming all over this means we are ready to start adding water around half cup of cold water, that we add slowly to our couscous just be careful as it's hot, make sure not to add lots of water.
Let it rest for 10 min and do this step for a second time.
The third time will be done once we are ready to serve, then you will steam the couscous and add half a teaspoon of Smen (aged butter) and start serving as shown in the video.
