    Made this for my inlaws just now. They absolutely loved it! Im on Kosovan origin, mother in law is Finnish and father in law is Moroccan (his sisters make THEE best food!). And they absolutely loved the couscous!!! It was an absolute hit. Thank you Alia for a brilliant recipe! So easy, tasty and so healthy!

    I recommend cooking the meat for a hour and then start with the couscous process. So when the couscous is done, the meat will be done as well.

    I think some of us are used to instant cous cous cooking techniques as in just add boiling water and it's ready but I guess this is the traditional and tastiest way to cook cous cous, this dish looks really tasty.

    There are many Moroccan dishes I like but this one by far is the most comforting to me. Simple though time consuming to prepare, with or without meats, either way I crave this dish. I think it's the broth with the sweet and savory veggies that make it so delicious with the couscous. Thank you for showing us the recipe.

      But her way is wrong you should cook the meat half way then start add the root veg and start the couscous process or it's gonna get cold and won't absorb the sauce

    Met a morrocan lady where my kids swim and she made me morrocan couscous and it was delicious I never love vegetables more in my life. I could not stop eating !!

    I would recommend to sprinkle olive oil over the dry couscous prior to soaking it. Alia you are a Moroccan star ⭐️ 😘

      Hi, there is certainly is! I can do the whole thing with only 15 mins prep. It tastes amazing, but obviously not exactly the same as the above, lengthy traditional method, but still amazing, wholesome, well seasoned food. If you want to know more drop a reply, I might make a vid on it!

      DatOneWeirdGirl before telling some false informations check your sources the first couscousiere was found in Algeria so the origin of couscous is algerian but all north african countries has their own recipes.

    Couscous is my favorite food, the best 😁😋...I do not steam the couscous I prepare the grain directly with butter and water... I put raisin, peanut and almond on top of my plate and It's so delicious that I can eat all the casserole. I even cook couscous for Christmas 😆. Merci, thank you🙏

    It s better to use meat with bones and also sprinkle couscous with some oil before adding water it doesn’t stick and it becomes fluffy ; tks Alia 😘

    "They smell like home"... Aww... Isn't that just what great food is supposed to do for us all? Make us feel just at home, no matter where we are.
    (Obviously more important for diaspora communities, but still.)
    And smelling your "they smell like home" teaches me more about you than any book or magazine article ever could. Because food is such a vital part of each of our cultural inheritances. So I need to do couscous ASAP! Haven't had a proper couscous since in lived in Paris (where there is a large North-African diaspora, for reasons that are rather problematic), so I will follow your recipe. I have no doubt I will enjoy it!

    You can save tons of time take the grains and fry with little oil then just boil water per directions and put grains in turn fire off after 5 mins fluff with a fork super simple.

    Almost perfect on the first try. I steamed the couscous over water though to make controlling the timing a bit easier.

    I normally cook the sauce separate and steam the cous cous with water. Is it better using the sauce steam? Does it add more taste?
