DADES VALLEY, MOROCCO - Today we’ve been invited to a local family home to eat couscous, the national food of Morocco and the dish nearly all Moroccan eat on Friday. So let’s learn about this incredible Moroccan food!

You can order couscous at pretty much all Moroccan restaurants, but when you get a homemade, hand rolled couscous meal, it’s something truly life changing. Couscous is made from semolina, and the process of making it was much more laborious than I had imagined. You need to rinse it and steam it three times over the course of a couple hours. But the result is extra fluffy and extremely soft couscous that melts in your mouth.

I heard of this delicious meal years ago and took a chance to try it out and was flawed at the wonderful taste and fusion of flavors it incorporates, especially the vegetables. Moroccans eat COUSCOUS only fridays we eat TAGINES in their different variations nearly on a daily basis mostly cooked in a pressure cooker than in the earthenware cooking dish with the conical shaped lid
He ate the salad first, that is the right way. You don’t eat the raw food afterwards as it would ferment in your stomach

I usually like my couscous without the cauliflower, maybe with sweet potato instead, it makes perfect combo with the pumpkin and makes it easier to make little balls

But the best way is to eat with your hand even the taste become more flaverful
