    I just made this! it was so simple and easy to make. My family is from morocco but a good portion of my childhood was spent with Tunisian family friends. I havent had Tunisian couscous ever since!

    I do swear by the fact that we should use boiling water for cooking meat. We follow the same method in my house too, this recipe was so amazing. I dint know what a couscous was until I saw your video 😍

    Thank you so much. I was taught to make this by gypsies in the South of France, 40 years ago (a lot of Algerians, not so much Tunisians but was like this recipe). My dad asked me to write down the recipe for the couscous and I wrote "do what it says on the packet"!! How many times have i wished I'd written this down. I've never been able to remember. Bless you, that's fantastic, I've made the casserole part today but next time will get a couscousiere. (Although my gypsy friends used a colander and tea towel). Many thanks.

      First Thank you for watching, The Tea towel is to prevent the steam from escaping the sides of the pot and cook the couscous in the colander, today's Couscous Steamer pots are made differently so the steam doesn't escape. Enjoy your couscous and thank you so much for sharing your story :)

      You can Imagine my face when I first came the US and see people doing that (couscous in water) I was about to cry LOL now I actually do it when I am in hurry :) but don't tell my mom

      The way they make the industrial couscous (couscous in water or sauce) is not the right way to do it, if you have a chance to try the Tunisian one made the traditional way go for it. You will love it

      Couscous has always to be steamed. Boiled couscous is just so wrong. No one would boil it in North Africa (and there are thousands of different recipes)

    Hi Eya, Thank you for this delicious recipe! I watched the Arabic version too and have a question, You mentioned that sometimes beside the cloves you add another spice/herb for steaming the couscous, "shous al ward", how is it called in english please?

      I tried many times to make Harissa but I think it failed because the taste was too bitter for me. I ever one week in Sousse and Sfax Tunisia and ate harissa with better taste and mouth watering. I am waiting for the link please

    How to know if the steamer has small holes or just regular pot

      A lot of Tunisian people do not use harissa for cooking. I use it like a bread spread but in sauce.

    I thought that Moroccan spice/seasoning or an alternative/equivalent would be used in this recipe instead of just paprika. Beautiful pan though!

      usually when there is lamb we don't over season, we want to keep the lamb flavor, but couscous with chicken, beef, fish, octopus... each one has his own spices and way to cook,

    I tried this recipe and it seemed very lacking in flavor. No ras al hanout, caraway, cinnamon, etc. I found a recipe from Chef Mounir at Baroque restaurant in Tunis that includes all of those things and the difference was like night and day!

      Tank you for your comment, in Tunisia there is no cinnamon in coucous, also the fact that this is lamb no extra spices needed, we get all the flavors from the lamb and the vegetables

    Sorry to say that it’s ok Tunisian couscous is not that bed but don’t say it’s the best in the world
    Because the origin of couscous is Algerian which is we made it more better than every one and don’t forget we are qualified between the first best cooking in the world even with sweet
    So plz don’t exaggerate
