The mushroom and onion sandwich is so good! The only changes I made was changing the bread out for wheat and the vinegar was red wine vinegar. Delicious sandwich!
Really loving your videos. You don't push veganism onto people and you don't criticise them for eating meat like other youtubers. You just show us and it actually makes me want to try it and it's enjoyable to watch :)

David Lopez What ? So you show interest in making a positive life change and your own mother comes up with a really negative response . Family rarely know what’s best for us , once anyone starts on a Plant based way of eating then we tend to become aware of all those kinds of things and make the appropriate changes . Please don’t be deflated by others lack of support , just go for it , everything else falls into place and you find support online or from others more on your wave length . Even if you just try it for about 22 days checking out the vegan recipes on the internet and the vegan options in cafes etc make up your own mind and pay no mind to anyone that try’s to make you stumble before you can even walk . It’s great that your here watching these wonderful simple Vegan recipe tips , good on you . One thing at a time
Thank you sooooo much! OMG I made the mushroom onion sandwich and it is so amazing! It really hit the spot. I'm a new vegetarian hoping to go fully vegan soon and this felt like a real sandwich not like vegan meat. Just a great treat for myself as I am learning more vegan recipes. This saved my life. I was about to fall of the wagon but it saved me. Its really tasty! Thank you thank you thank you!!!!
I tried the second recipe yesterday (minus the pesto plus mushrooms) and it was DIVINE. I'll be making it every day! My mother also loves it and will be eating it often (which is great because she usually eats meat with every meal)!
Oh my goodness I just made the first toasty for my family dinner tonight and I DIED. It is literally the best thing I've put in my mouth this week, and SO easy. Thank you for changing my world!!!
Ela, these look so delicious! I went shopping yesterday for all the ingredients and I'm making the first sandwich today and the 2nd tomorrow. Wish me luck! I can't wait to try them!💖 I just recently turned vegan after 7 years of being vegetarian and your recipes including my new favorite, sweet potato, inspire me to try everything you show here. Thanks from Mexico.
I made both of these toasties today as open sandwiches & they were sooooo gooood! I made the pesto without nutritional yeast (or cheese) & substituted the tar tare with mayo. I was so surprised at how easy it was to make humus & pesto from scratch.. Never will I ever buy ready made humus/pesto again! Thank you for sharing your recipes & I look forward to more of your delicious & nutritious creations. #YUM
I made the mushroom one and it's sooooo delicious!!!! I can't wait to make the second one. For the first one, I made a few changes according to what ingredients I had. I sliced 3 tiny shallots, carmelized them without the vinegar and it tasted great. Peeled and chopped 2 mushrooms and sautéed them with seasoning. I didn't have tomato relish so I decided to make my version. Halved up a few cherry tomatoes. Added butter in the same pan I used and added in the tomatoes. Added in chopped green onions and seasonings. Added a little water after a few minutes and smashed the tomatoes a lil. After everything I toasted the bread. Spreaded mayo on one side and the tomato relish on other slice Put on mushrooms and carmelized onions lettuce and a slice of cheese. Everything I made was only enough for one sandwich. Woooo everything was AWESOME!! I'll be making more rn for my lunch tmr Sorry for the long post!!! But I just had to share Thank you for posting this video!!!!
Tried the pepper and zucchini one for dinner tonight and both of us found it to be absolutely deee-licious. :) The mushrooms and onions one is going on my grocery list for next week! ;)
The first sandwich looks delicious! I've recently been sorta slacking on eating fresh vegan food (pasta and canned stuff) and I love the taste and feeling I get from eating home made veggie sandwiches! Definitely will try these
Your sandwich recipes have solved the road block using a panini maker. Toasting the bread in the panini maker first and then adding the ingredients is masterful. The creative versions also help the imagination. Can't wait to explore more of your creations.
These look so good! And it's all NZ ingredients so I can just whip down to Countdown and buy them haha.. Finding out that Tartare sauce is vegan just changed my life. THANKYOU!!!!!
You can roast your garlic ahead of time in the oven covered with canola oil until they become soft, then strain. The oil itself will be a roasted garlic oil you can cook with, and the roasted garlic can be smashed into mayo, added to pizza or marinara. I enjoyed your video and I am considering vegetarianism(not read to let go of dairy). Thank you for the video.
Grilled sandwiches hit the satiation spot. Especially in the winter months. As for vegan cheese, I found Chao cheese. Love it and have once again been enjoying my grilled cheese sandwiches without guilt.
I am so obsessed with these! I've created my own sandwich by combining these two recipes together and it is my staple meal. I do onion, red pepper, and zucchini with pesto hummus.
Everything you make always looks so yummy! It really makes me want to convert to being vegan, but unfortunately in my current household that would never be possible. Looks like I'll start the real me when I move out!!
Honestly, you look like an angel. A vegan angel, lol. Seriously, your voice, the lighting, the flowers, your clothes...heaven sent. Thanks for the ideas:)
Made the mushroom one for lunch. OMFG absolutely DELICIOUS. I had to make it twice, because i devoured the first one before i even left the kitchen. Literally in 30 secs. And i was still wanted more. P.S - you can oven the bread instead of frying. Its even toastier
+Flowerrose121 I love how my 2nd comment got deleted. i will repost it again. SO - I felt sick 1 hour after eating this. Literally...like i wanted to throw up. If youre not used to eating like this - it will leave you feeling AWFUL. All the overdosing on mayo and grease was literally turning my stomach. I was so sick and constantly felt like I was on the edge of vomiting for a few hours after. So I advise people not to fry the bread, also dont use too much oil when frying and limit the overall use of so much mayo...if possible, use a non stick pan and no oil at all. Worked so much better for me when doing this the 2nd time round. 2nd time around i didn't feel sick. 1st time was overload/disaster.
i made the second sandwich. didn’t think i’d eat because well... i’ve never had a zucchini sandwich with pesto and hummus. also not a big hummus fan... or a zucchini fan. lol . but... i absolutely loved it!!! made some potato wedges to go with it. my husband and i devoured it. added it to my favorite vegan recipes list. THANK YOU!!
Claudia Cook i am not a big fan of mushrooms but i found out that fried with some garlic and olive oil they are quite nice. i let them cook until all the water that comes out has evaporated and the mushrooms become kinda dry again.
+CoCoLucky Kitchen (Georgia) Ikr, whenever a recipe calls for garlic, I add it "to taste" which usually means I use an entire one of those little plastic pack things that has like 8 cloves in it. It feels weird to have left-over garlic...
ela those look so yummy and beautiful! I would try to cut back on the oil a little bit though. I used to use so much oil in my cooking until i started cutting back and found that i had a lot more energy, my skin got better and my weight stabilized. it was crazy. love your vids :))
For those thinking of going vegan you need to know that most margarines have whey in it, which is a byproduct of the cheese making process. Produced by making curds, the whey is the left over liquid after the curds are made. I am sure you are using a real vegan one, can you tell me what brand are completely whey/milk free? My daughter has a serious milk allergy and I need to find her a delicious, reasonably priced milk-free butter/margerine substitute. And is there one that is good on pancakes, waffles, and muffins? I feel bad that she can't eat the same things as her little sister, big brother, nana, grandpa, Mama (me, she still calls me mama even though she is 7 and knows most kids her age don't call their moms mama anymore, she doesn't care and nor do I) and her Daddy Jay (her stepfather). She definitely got her tons and tons of food allergies from me, because she has quite a few and I have a ton of them making what I can eat very slim. Plus I have gastroparesis, which is when you're stomach becomes paralyzed and digesting some things becomes next to impossible. Now that I have my diet pretty much in order my symptoms have become less. Granted when I do eat something I shouldn't, I do end up suffering for it one way Or another. I really need to get out of this bad habit because it sets a horrible example for daughter. Anyways sorry for babbling, I really shouldn't comment when I first wake up and have a fever.... Anyways again, I would really appreciate a couple of names of vegan margarine and where I can find it. Thank you and I hope you all have a sparkling day!🌌
Stephanie Shannon Lanyon Miyoko's cultured vegan butter is completely dairy free and palm oil free, which is great for the environment. and tastes extremely buttery.
Third time making the Mushroom and Onion sandwich after watching this video. I've kinda tweaked it to make it the best version for me: Switched from yellow to red onions (sweeter) and used 100% baby spinach. This sandwich is a burst of flavours! Highly recommended!
+Katey Melino In sweden it's rucola, with a harch ck- sound, thats also the italian name of it, so thats probably where both rocket and arugula origins from.

OMG! The mushroom and caramelised onion toastie was so delicious, I think I am going to make a second sandwich! Cannot wait to try the other one. Thanks for such great videos.
I made the zucchini and bell pepper one but I had no pesto so I just used fresh basil and let me tell you it was soooooooo delicious:) Thank you for all thoese vegan recipes videos! You just got a new subscriber from Norway:)
I'm not vegan or vegetarian, but the mushroom and onion [I added spinach and used regular mayo) sandwich is absolutely delicious! I don't have to eat meat alot and this is a great option for lunch or dinner. Heck, I'd eat it for breakfast! I had leftover veggies and will add them to my eggs in the morning. Thank you for sharing this recipe!
This is just what I needed thank you so much!! I've been struggling to find indulgent vegan recipes and vegan cheese just doesnt cut it for me ! You're a star 🌟 I'm going to try both of these 🥰
i make my pesto almost the same, i add some pine and walnuts too aside of cashews. and i put my peppers with balsamico in the ofen, i initially did that for pizza, but its quite good for all kinds of stuff. i also use some italian herbs for zucchinis.
I made the veggie sandwich last night with red pepper zucchini baby Bella mushrooms onions on sourdough bread. I toasted it with the veban butter just like u showed and put the vegan mayo and hummus and greens . It was amazing thanks for the new lunch idea!
Yum yum! I know those sandwiches will be delish! Love veggie sandwiches. I also make a BLT use eggplant "bacon". I marinate eggplant with tamari, a drop of liquid smoke and a teaspoon of maple syrup. It is so good! Goes good with scrambled tofu for breakfast too!
This looks amazing! I myself though would add some vegan deli style "Ham" and avocado. I love veggie sandwiches since becoming a vegan a year ago. So easy and satisfying.
Wow I just made one of your sandwiches, it totally hit the spot! Great recipe and video. I changed it up a bit and did a sandwich with the onion, mushrooms, zucchini and baby spinach with hummus and the Pesto with a little mayo in the Pesto. Amazing!
I'm addicted to the mushrooms & onion sandwich I've made it like a million times since seeing this video.
BOrganically hmmmm , I'll have to give it a try !

So good and so much flavor and texture!!!! No need for meat or eggs or dairy :) Thank You!
