I do scrambled tofu, chickpea "egg", vegan ham, vegan cheese, Just egg, chick pea "Tuna", vegan Tuna (so good, I had that today), tomatoes, vegan feta and lettuce, grilled eggplant, fried crispy potatoes, tofu balls (Youthful vegan recipe) and so many more

The food and the advice both make my mouth and eyes water at the same time. My heart aches too because some stories are similar to mine. They are very inspirational and relatable. I really wish, pray and hope I will be happy and carefree in my future and be the pillar that will easily support my family...I want to have such strength and ability to do so without faltering. I mean what's good a pillar when it cracks under pressure? With so many responsibilities stacked on me I still wanna be able to enjoy my life, I wonder if that's quite selfish of me...
I made a variation of the first sandwich with leftover mint chutney instead of pesto, and I added shredded rainbow chard and lemon drop basil instead of arugula. SO GOOD. ❤

Good recipes. I wanted to add, smoked baba gannouj and cashew cream cheese(dill, onion) make great sandwich spreads! I may try an avocado, mushroom and spinach sandwich on rye w grilled onions and spread. A bit of everything.

Great 👌 just a tip for caramelized onions as it takes a bit time, when we add onions to oil it takes time for them to turn golden or brown add the sliced onions without oil first that's how we cook it as we use onions for our foods always and we should first cook the onions 🙂 stir it so different sides cook and it loses a bit water and turns softer and changes color to light brown then add the oil and stir it until it's golden or caramelized.

just egg perfectly emulates the texture but is slightly more mild in flavor than actual eggs, so I add Kala namek to make it a little more eggy tasting.
As a non-vegan who looks for ways to eat more plant-based meals, I would love to find more vegan meal suggestions that don't use highly processed vegan substitutes, and just use veggie ingredients

You should also try a banh mi sandwich! The varieties that come with tofu are vegan :)

Whoa. You should really try searching for Indian vegetarian food online. In India, we grow up eating vegan sandwiches haha.
