I used to work in a sushi shop my first year of college. We'd get quality fish like this flown in once a week from Hawaii and sometimes we'd end up with extra fish we knew we couldn't sell and I'd go home with it. I learned the magic of raw fresh tuna that year.
Those knives are extraordinary! Whoever would have imagined that an individual could turn harvesting tuna into mind-blowing, therapeutic art. This guy is amazing... 😎
as a furniture maker/woodworker, this guy sharpening these knives on a Tormec with no angle guide is impressive af. The angle/bevel of these blades is extremely important and to have the muscle memory to freehand that is pretty cool. Edit: Clearly I am an unskilled moron and apologize for my insolence. I never meant to offend anyone by thinking something was cool.
I reckon I know what the second ‘wheel’ was that he was using to sharpen the knifes. It’s an mdf disc with jewellers rouge used as the polishing compound. People on you tube have made thier own versions of these. Blades so sharp they can cut paper like butter. I don’t think it’s a tormec it’s just a bench grinder he’s using.
Agreed! But you do learn it. I've been a mechanic for over 30 years and I can sharpen drill bits in seconds free hand. Hell, I can do it with a hand held grinder in one hand and the drill bit in the other hand. 30 years of practice really pays off...
My father is a master craftsman...taught me how to work with tools from the time I could walk, by the time I was in my teens I could sharpen tools freehand on an angle grinder. My favorite tool to sharpen was a drill bit...on construction sites, the guys would all bring their tools to me and watch me do my thing, I swear some of them went out of their way to blunt the damn things just so they could have some entertainment hahaha!

It's something watching someone who not only knows how to prepare food like this, it isn't so much just cutting up the tuna, but it's almost like watching an artist at work. The care and preparation going into it, and there are no wasted cuts, everything is done with a purpose. Here in the states, that has been lost where meat is prepared simply for speed and consumption, but not to be savored and enjoyed like you see here in this video.
Yeah, my grandma is an artist also...............she cun a chicken corpse to pieces also
I've heard some really upset japanese peoples opinions on restaurant. They were super upset because the food was subpar. Not cause they had paid for it or any other typical westerner reason.
But because it was disrespectful to the animal. If you're going to kill an animal to eat it. You have a responsibility to make it as tasty as possible to honor it or something like that.
@@Gofex1337 What an utter bullshit..........its not delicious at all, its a piece of raw fish !!!
@@Gofex1337 I guess the animal will be very grateful it was killed with respect ?

I hope those who got to eat this fish understood the precision it took to get it to them.
Cognitive dissonance. We don’t need to kill trillions of fish & billions of land animals to survive at all

Whoever would have imagined that an individual could turn harvesting tuna into mind-blowing, therapeutic art.

as a furniture maker/woodworker, this guy sharpening these knives on a Tormec with no angle guide is impressive af.
Thought the same thing lol
If that's a Tormec, he really modded it and put a whole different motor in there. Mine spins about 1/100th as fast
That's insane bro. Much respect shown to the fish while prepping. Gotta love it.
Thanks 😊
He’s showing respect by not just hacking off edible pieces and tossing them out. He’s also presenting it as beautifully as possible. He received a dead fish and did his job with respect

As a commercial fisherman, this was great to watch, and reinforced the need to handle and store our catch respectfully. Even though this beautiful fish was no doubt handled with care, it still had quite a bit of bruised flesh, which would have affected its value considerably.. very impressive knife skills here too. Thanks!🙏
Where/when do you see bruised meat? Just wondering what to look for. Thx
I was wondering what the discoloration was from. I didn’t realize how drastic it would be.
That bruised meat is because it's more than likely pen raised or purseined. They get beat up.
@@bido8176 All the dark material trimmed off is blood line. Very strong fishy flavor that most people don't want to eat.
@@bido8176 The dark red to nearly black colored flesh is the broken blood vessels. Ie; bruising. A lot of good meat had been ruined. (I still can't take to eating fish raw. ya' gotta cook it.)

The smell is unreal 🏴☠️now im curious
What I love the most about this is the respect he is showing the Tuna! Not just as food but as a gesture of thankfulness that it could die so he could live sort of thing. He is cleaning it and moving it around gently. Even the off cuts he is taking his time and not throwing parts around but carefully removing and placing down. I hate all types of butchering but I love my meaty and fishy foods! I couldn’t do what they do. But I have so much more love and respect for those that treat it with respect!
