Made this yesterday, and put it in the fridge overnight to serve today. Just a warning: the meringue pulls away from the edge of the crust (no big deal) and it was a little bit "weepy" in the bottom of the dish (but the crust was not mushy or anything). And the taste is delicious! We had no problems with the "look" of the pie... especially once you dig into it! If you are concerned about such things, maybe serve it the same day. Or maybe I'm the only one who experienced these next-day-side-effects. Who knows?! 10/10 would pie again.
To prevent shrinkage, be sure to spread meringue all the way to crust, "attaching" it to the crust. If the meringue weeps, the egg whites were beaten too much.

Those with issues with meringue, do it the old school way. whisk the egg whites with a hand whisk until it sticks to the bowl when you turn it upside down. then add sugar, whisk some more, add sugar whisk some more until all the sugar is in there. It's slower than using any mixer or machine and it'll tire your arm, but you make perfect fluffy meringue every time. Great recipe, instructions, video though.

Niiiceee. You know lol, if you're worried about "scrambled lemon meringue pie", you can whisk the eggs first in a bowl, then add half of the lemon filling to the whisked eggs, whisk some more, and pour it with the rest of the lemon filling ;) Thanks for the vid!

My only dilemma, is cornflour same as cornstarch? I'm very confused from cooking sites, no one is giving a clear answer. Since you're the cook, and this is your recipe, would you please tell me? Tried it, everything worked out fine, apart from the meringue. That's more like a marsh mallow topping, but still tastes awesome. Any idea why it didn't go crunchy? I used icing sugar in the whipped egg whites.

u wont taste raw eggs because they are not raw. They cook in the filling mixture as it is very hot when you add them :) as you can see at the 4 minute mark

You can use cornstarch - it's the same thing.
@Yasuko1111 He's talking about Celsius degrees and yes caster sugar is a granulated white sugar.

No, corn flour is used to thicken sauces, flour won't do that
