Braised pork belly ("Kakuni" in Japanese) is a popular Japanese dish that goes well with rice, beer/sake, and ramen noodles.
This is a recipe that uses a pressure cooker. It allows you to make kakuni in relatively short time (without a pressure cooker, you'll have to boil/braise the pork for hours). In addition, the pork becomes melting tender that you can easily cut them with chopsticks !
■Ingredients■
700g pork belly
1 green onion (only green part)
20g ginger
1 onion
4 eggs (optional)
[Seasoning]
75ml soy sauce
100ml sake
75ml mirin
1tbsp sugar
130ml water*
*Amount enough to cover 80% of the meat.
