- "Chashu" is originally a Chinese dish ("Char siu") which is roasted/barbecued pork with glaze consisting of spices and other seasonings. It is adapted to the taste of Japanese people, with different seasoning and cooking method: Japanese chashu is often "braised" without any spice.
Japanese Chashu is one of the most common toppings of ramen. Ramen served with grater amount of chashu is called "Chashu men".
It also goes well with steamed rice, sake and beer !

900g pork belly
■For Parboiling■
20g ginger
1 green onion (green part)
4 cloves garlic
onion (optional)
Chinese cabbage or cabbage(optional)
■Seasoning■
250cc soy sauce
100cc sake
100cc mirin
100g sugar
pork broth (enough amount cover the meat)
