    "Tai-yaki" is a popular street food in Japan. It is a fish-shaped cake filled with sweet red bean paste, custard cream, cheese or other fillings.
    In Japan, “tai” (red sea bream) is a symbol of good luck/celebration, and this fish (with head and tail, not a fillet!) is often eaten at various celebratory events. This is a tradition based on a play on words (a pun) between “medetai” (“worth celebrating” in Japanese) and "tai”.
    In addition, red and white (the colors of the tai) is an auspicious color combination in Japan. For example, red and white striped curtains are used to cover the celebration venues.

    [5-6 pieces]
    150g cake flour
    200g water
    6g baking soda
    1tbsp honey
    250-300g red bean paste (50g each)

    840g sugar (1.2 times the weight of red beans)
    840g water (same weight as sugar)
