【Japanese Food Recipes】Rice-Stuffed Squid ("Ikameshi")

  • "Ikameshi" (literally means "squid rice") is originally a local dish from Hokkaido. It has become a common dish throughout Japan.
    Ikameshi was invented as an "ekiben" (bento, or packed meal, sold at railway stations) at Mori Station in Hokkaido during the Second World War, when the rice was in short supply. It gained a reputation for being delicious and filling. You can still buy the ekiben at Mori Station.
    [Ingredients]
    1000ml water
    10g kombu
    6 squids
    150ml glutinous rice
    *1tbsp soy sauce (mix with rice)
    *15g ginger (mix with rice)
    50ml sake
    1.5 tbsp sugar
    1.5 tbsp mirin
    3 tbsp soy sauce
    * 1tbsp = 15ml

    00:07 kombu dashi (1)
    00:21 rinse glutinous rice
    00:45 clean the squids
    02:07 season the glutinous rice
    03:08 stuff the squids with rice
    04:15 kombu dashi (2)
    04:39 cook the ikameshi
    06:04 reduce the sauce
    06:32 cut the ikameshi

    I think Ikameshi is better way of eating squid than Sushi or Sashimi.

    Tried it yesterday. Nay. Not to my liking. Wasting my cooking gas. I like cooking Japanese food, but not this one. Prefer squid that cooked in short amount of time. Fresh, soft, juicy, and tasty.
