    Ingredients and procedures :
    A large head of fresh cabbage
    Boiling water with cumin and salt for cooking cabbage leaves for seconds before filling
    Cut the leaves into equal pieces as shown in the video
    Prepare the filling
    We need Short grain rice
    For each cup of rice
    Sauté 1 chopped onion large size in oil or ghee then add
    1 cup tomato juice
    1 tbsp tomato paste
    Salt to taste
    Cumin, black pepper, dried coriander, cinnamon powder, chili (optional)
    Cook on medium heat until the sauce becomes thick then turn the stove off then add fresh chopped parsley, dill and coriander and raw chopped onion
    Then add rice and some raw oil
    In a pot put a layer of cabbage leaves 🥬 as shown in the video
    Then fill in the cabbage leaves with the filling We prepared and roll it then place the rolls In the pot add hot broth and some raw oil cover and cook on high heat until comes to boil then cook on low heat for about 1 hour

    this sounds so dear to my heart. i grew up in Cairo. Lived there from 8-18. there is no "p" in the arabic pronounciation so they pronounce it "b" everytime i hear it i miss my home in Cairo.

    Okay story time🤣
    So, I'm an Indian who lives in Saudi and one of my neighbour was Egyptian. And she used to make amazing Mahshi. Like really cool Mahshi. And she liked my family and me, so she invited us to make mahshi with her and she made it exactly like this. The dill-coriander-parsley she said was a formula of Egyptian cooking. May Allah give her and her family the best of both worlds. This video reminded me of her. And as she says and i relay it to you, "may there be Khair in your hands".

    This looks very tasty, easy to eat, filling and satisfying. Besides that, it looks satisfying even if you don't add meat. The process looks a bit much for me, a 70-year-old, but because of how delicious and satisfying these cabbage rolls look amd promise to be, I am encouraged to attempt making them. Thank you for this recipe and for the careful instructions on how to make it. (I've given a "thumbs-up" and am now subscribed to your channel. Middle Eastern cuisine is one of my three favorites, along with authentic and quality Chinese and Mexican cuisines.

    I'm making this today. Hope everything goes well. I'll update how they turn out. This would be my first time making them. Right off the bat, I noticed that my cabbage leaves are thicker than hers. So even after boiling, they aren't as soft as hers.
    So I made them. They turned out soooo good! So soft and they stayed in shape. I used basmati rice, as I couldn't find short grain rice, and it turned out so good regardless. I just cooked it for 40 minutes instead of an hour at the end as basmati rice require lesser cook time. Also, I used less salt so that was a minor problem, but I sprinkled some salt on top while eating and it was fine. I'll make these again for sure. But they are a lot of work

      Oh you’re doing good work. So happy you cabbage rolls turned out so good regardless your cabbage leaves are thicker and regardless using basmati rice. I know they are a lot of work. Because of this I rarely make them. My mom used to make them twice or more every month . She passed away 5 years ago. Whenever I make or eat cabbage rolls I remember her tasty cabbage rolls. It’s her who thought me how to make them.

      Thank you for your encouraging comment. Pleased you like the recipe. You are right the day I make cabbage rolls the aromas not only in my kitchen but you can smell outside my house too. My sons and my husband usually know they are going to have cabbage rolls for lunch before they come inside and still in the front door say Oh mom you’re are making cabbage rolls .

      Yes you can cook in oven but before putting into oven let it come to boil on the stove then put a lid on and bake in a preheated oven on medium heat 200c degree for 100 to 120 minutes

    Back 20014 i was working in one of hospital in Makkah, Saudi arabia.
    I miss this, my egyptian friend from alixanderia always cook this and always call me to taste her mahshi, i love it from the first taste and always wanted to make.

      The bottom layer is to protect the rolls from being burned or stick to the pot. You can use potato and onion slices as bottom layer and you can serve as a side dish you can have a look at my recipe for grape leaves rolls and see the bottom layer I did. The recipe is in this link 👇👇

      I would like to thank you and wating you to comeback and say how was your try of making malfuf and if you like it.
      My pot material is ceramic and the prand is Neoflam . It is good and really non stick but needs special care in handling and cleaning one should not use metal cutlery on it . I use it only when I make malfuf or rice . I usually prefer to use stainless steel pots when cooking meat, chicken, vegetables…..

    What kind of rice have you used for this recipe? I have tried basmati rice but I'm going to try short or medium grain rice next time.

      I used Egyptian short grain rice. It’s more starchy than basmati rice.

    How much rice did you use?

      The amount of rice depends on the size of your cabbage. I used 4 cups but for your first try you can use less amount . In the video I mentioned what to add for each cup of rice .

      Lemon would change the original taste of cabbage . I usually add lemon to grape leaves rolls it enhances the sour taste of grape leaves. This week I’m preparing a video for grape leaves rolls I am sure you’ll be satisfied with the recipe. Wish you a nice day.

    Tomato sauce or onion are not used for 100% in Syrian cabbage rolls, They used broth, or water they add for it salt+ Mint+Garlic and before turn off the flame they add Lemon juice :)

      Yes you can but the result would be slightly different but still ok. Make sure to use the amount of broth suitable for the kind of rice you use in the recipe. Soak your rice if you usually soak your basmati rice .

    I cannot find cabbage so large and no matter how long i cook it it never seems to get as paper thin and soft as yours is. So I am finding it difficult to roll . Why did i start doing this lol??

      The cabbage you have is for salad it’s difficult to roll. The cabbage I used is a different species. But your cabbage still work the result would be slightly different

      @@Avocado-fj4ib I got the cabbage in a jar and I don't know it is boiled or not but we will try and yes I live in United states

      @@kingtut3021 we boil cabbage to get it tender in order to roll it easily without breaking it. If the cabbage in the jar is tender and can be rolled easily so use it but first soak it in some water to get rid of preservatives and salt try in small amount at first hope your trial will succeed.

    Too much work separating the leaves in boiling water. I freeze my cabbage a few days and then thaw it and all the leaves are soft and peel from the cabbage. In seconds I am able to fill and roll them. After I cook them in the sauce, they taste exactly the same as the boiled leaves. I recommend trying it.
