    Ingredients
    Cake
    1 ½ cups all-purpose flour
    ½ cup granulated sugar
    1 ½ tsp baking powder
    1 pinch salt
    ½ cup cold unsalted butter, cut into pieces
    1 cup 2% milk
    Sauce
    1 cup maple syrup
    1 cup packed light brown sugar
    ½ cup water
    ¼ cup unsalted butter
    1 tsp vanilla extract
    Directions
    Cake
    1. Preheat the oven to 350ºF (180ºC). Lightly grease 8 individual (5-ounce/150 mL) ramekins or other ovenproof dishes and place them onto a baking tray.
    2. Sift the flour, sugar, baking powder and salt into a large mixing bowl. Add the butter and use a pastry cutter or your fingertips to work the butter into the flour until a rough, crumbly mixture - small bits of butter may be visible, but that is OK. Add the milk and stir until the mixture comes together - it will be sloppy. Spoon this into the prepared baking dishes.
    Sauce
    1. To prepare the sauce, bring the maple syrup, brown sugar, water, butter and vanilla up to a boil over high heat in a medium saucepan, stirring occasionally. Once it reaches a rolling boil, remove it from the heat and ladle this over the cake in the ramekins - it will seem like a lot of syrup, but that is expected (half will bake into the cake and half will thicken into a sauce at the bottom…magic!). Bake the puddings for about 30 minutes, until a tester inserted into the centre of a pudding comes out clean. Let the puddings cool for about 15 minutes before serving (that syrup is hot!)

      So interesting! One of my favorite things on your channel is learning about dishes specific to Canada and especially the Québécois. That and your great technique explanations! - Have you done much bread/roll baking using a tangzhong (flour roux) to keep homemade bread softer and stay fresh longer?

      Oh Yum with Anna Olson Hi Anna! I’m from Argentina. Here maple syrup doesn’t exist, is there something to replace it with? Maybe honey or dulce de leche or maybe caramel? Thanks! Love you!

    We never had dessert as the war was raging and the nazis robbed the Dutch of our food. But my father got some flour and maple syrup from the Canadians who freed us from the nazis and gave us the recipe. Still remember it on my tongue. It was like heaven on a spoon!

    In Saskatchewan, we called this Diefenbaker pudding. Of course, we didn't have maple syrup, so we used more brown sugar and also raisins. Sure it was sweet, but dessert was a treat not an everyday thing and we offset the calories with a lot of physical labor. No diabetes in this family, BTW, for the sugar police' info.

      It not eating to much sugar but to many carbs that is the problem ! After you get diabetes you must monitor blood sugars to control it!

    Watching her take the top off of the milk bottle reminded me when i was a little girl. That wss was the way our milk was delivered. Anybody else remember the milk man? Brought milk twice a week, very early in the morning before the sun came up. Thanks for the memories ☺️

    I am going to make this recipe this weekend but I am going to cut the recipe in half. I have seen other recipes that instead of water for the syrup, they use cream. I have a little 35% cream left in the fridge and will try that. This will be the perfect dessert to make before my month long January diet rolls in next week!

    My mother made this for years but she called it Hasty pudding - she would make
    the sauce with only water, brown sugar & vanilla - put it into the bottom of a cast
    iron pan and drop the batter into individual spoonfuls on top - she always added
    raisins to the batter - we absolutely loved this as children and us kids continue
    making it to this day - I like your idea Anna of making it in individual ramekins -
    will try this next time -

    Have made this for years, but without the maple syrup, just the brown sugar. I also do it in a medium size casserole dish. It is great cold the next day when the sauce is thick!

      I'm not a big fan of maple syrup. For me a very little goes a long way. So your version sounds appealing to me. Plus a couple of my family detest maple anything. So is it the same everything just leave out the cup of maple syrup?

    In our family this is called Dishpan pudding. My grandmother always made this and we continued the tradition.I made it just the other night. Some of the ingredients are different . Comfort food !!!

      I always cut the sugar in recipes. On this one I bet you could double the water and 1/2 the maple syrup & brown sugar.

      Sugar won't hurt you if you exercise and don't eat things like this every day. Sugar doesn't cause diabetes.

      bernardo flores The lack of brown sugar in the syrup will affect its texture. I would lessen the amount but I wouldn’t cut it out completely.

    Syrup on top and cake batter on the bottom but when baked, cake rises to the top and syrup lays down to the bottom. Now that is baking magic.

    Hello, Anna! Can this be made in a single baking dish instead of individual dishes?
    For people who are concerned about the amount of sugar, note that there isn't that much sugar in the cake part. The flavour is supposed to come from the sauce! I grew up on this.

      You can make a full sized dish!! Though you'll have to bake it a big longer. Google 'pouding chomeur' and use google translate to help you out :) There are even lots of videos!

    Not bad, but the fancy version of _pouding chomeur_ includes cream in the sauce, and we would use brown sugar if we can afford maple syrup

      The original recipe only uses brown sugar. Use 2 cups brown sugar, 1.5 cups water, 2 tablespoons butter, and the vanilla extract instead. Make the cake the same :)

    Poor Man's Pudding this is not lol. Maple syrup for sure isn't cheap ha ha. Poor man's version would be to substitute cheap ole corn syrup he he. But I love how easy it is to execute this recipe, with very few ingredients. Saving this!

      Myra Khan nothing can replace real maple syrup and it’s distinctive taste but you could use the fake stuff, aka table syrup

      Yes, just use 3/4 cup of maple syrup and 1/2 cup sugar for every 1 cup of honey. Just be aware that the taste and texture will be different.

      The original old recipe doesn't use maple syrup, it just uses a sauce of brown sugar and water. You can try that! Try two cups brown sugar, 1.5 cups water, 2 tablespoons butter, and the vanilla extract. This is according to the Quebec traditional recipe database, which uses approximately the same amount of cake base as Anna.

      Because in rural Quebec during the depression - these are ingredients that Poor people would have been able to afford / would have had in the cupboard. Not so much today.

      @Redblade Yes - it actually was that sugary. But unlike today where many of us sit all day, and exercise very little; the people eating this would have been hard working farmers. Also unlike today where ppl can / do eat like this every day; this dish would have been an occasional treat. Totally different times altogether.

      I know this is old, but I just want to tell you the original Quebec recipe only uses brown sugar and water to make the syrup. You don't need honey!
