    I put my basil in a blender with just enough oil to blend it and then pour it into a medium ziplock and freeze it flat. Then when I need basil for something I’m cooking I smack the ziplock on the counter to break off a chunk and add it to my meal. It is so easy, fresh, and tasty this way!

    I have a desk job and I love the garden work. I feel much better after an hour in my garden :) And the harvest is the cherry on top.

    I just found out that some HOAs do NOT allow you to have a garden on your property! My sister’s development is one of them. This blows my mind! They are not allowing you to grow your own food. I would never live where there is such a thing like HOA but seriously I feel bad for people who do.

      My MIL lives in an area with the same issue. She planted chives as a border planting and no one realized!

      It’s a vermin issue. In close proximity houses, rats can infest. Root crops, corn, in-ground potatoes are a health hazard. As is compost heaps/bins.
      Surreptitiously planted pole beans up trellises or containers of herbs amongst potted annuals, or raspberry canes mingled in climbing roses can be hidden.
      I’m in the UK living away from my family home and main garden cos reasons, but when my (away from estate) neighbours put out their trash bins the night before collection, the rats go rampant. 🤢

    In reference to your basil question, we love to make green pizza sauce with basil, olive oil and some chicken bouillon (cube, not liquid) - because of this, I’ll chop my basil in the food processor and then fill ice cube trays with the chopped leaves and olive oil. Then I can pop out a cube or two for pizza :)

    Last year I stuffed my banana peppers with cream cheese and wrapped them in bacon. I vacuum sealed them and froze them. They bake up really nice from the freezer. I gave them out to my family to enjoy too. I made your cowboy/cowgirl jalapeño relish this week. I can't wait to try it. Love your harvest video. Have a great day!

      The stuffed banana peppers sound wonderful. Thank you for the idea; I am going to try that since my digestive system does not allow for spicy foods and I can't do the poppers.

    I throw my basil in a blender with a bit of water then pour into ice cube trays and freeze. I've been hooked on strawberry basil smoothies . Just put the basil with frozen strawberries and homemade yogurt, honey and a collagen powder . Yum.
    You could put your basil cubes in lemonade!

    Thanks for the encouragement.. all the YT growers inspired me I could do this.. Our main garden is 4 high raised beds, total space 40'x1' ! We are getting another soon about 10'.
    We grow vertical we just pull things out and pop other things in.. sowing two weeks before.. you don't need a lot of space.. just some God given faith he will increase and give you wisdom.
    One thing I have learned, only grow what you normally eat oh and learn how to preserve that food. You will be ahead of anything this crazy world throws at you. God bless.

    I haven’t ever grown Malabar spinach, but I just read that the leaves get slimy like okra if it’s over cooked, so canning it might not be the best option.

    I'm glad I'm not the only one that lets "wonky volunteers" live and bear fruit! You never know what you'll get. And the volunteers are so healthy and a fun surprise. Especially the ones growing in the compost pile!

    Make Basil Watermelon juice! Grab a watermelon, take the seeds out or get a seedless watermelon, throw the meat in a blender. Strain it through a fine sive or cheesecloth. then add basil, a smidge of lemon juice, and honey/sugar to taste. OMG RACHEL IT IS AMAZING!!!

    CT, my garden is a bit pathetic this yr. I'll be greatful for whatever comes in. I've never seen a season like this before. Never ever had problems with cukes and squash... I'll be greatful for whatever it produces, then supplement with the store produce.

    I have 60 tomato plants and have yet to get a cherry tomato here is southeast Wisconsin. I’m feeling a bit jelly. It was my first year growing them from seeds so I feel good to have 60 even if they are slow. Oh! My celery is stunted! Lol. The things I learn from your garden.

    Nasty January/Canuary Saturday in DownEast Maine. Freezing rain.60mph wind, snow and the lights keep flickering. So I’m canning beans. And letting your channel just roll, feels like company in the kitchen and this one about growing came up. Perfect day to remember this past season’s harvests. Thanks Rachel.     I started a new garden this year. So far I have made your pickled coleslaw, zucchini bread jam, pineapple zucchini. I have put up 2 batches of green beans, dill relish, pickles, pickled hot peppers and mullberry jelly. Can't wait to make cowboy candy! Thank you for all your knowledge and inspiration! I have to tell you I am 67 yrs old, and I did this all by myself! So you are never too old to garden!! I stay busy as Patera says!

    i have noticed the same thing! that red cruciferous vegetables do not get attacked like the green ones. I figure I will not bother with green in future because I can be getting my greens from beans and peas and lettuces etc. We are about to start spring in a month and I have just ordered all my seeds and due to start propagating next week ready for the growing season. :) xxx

    Such a great harvest! I agree on growing multiple varieties of tomatoes. I have always grown cherry tomatoes. This is the first year I’ve grown a large variety (over 40 different varieties) of tomatoes. So delicious!

    I'm so grateful that you've had such a wonderful harvest season where you are, especially because I know you plan to rest from gardening next year. So many areas, like ours, have had a horrible time with the extreme heat and lack of rain. But seeing your garden gives me life! Not every year will look like this. Maybe next year will be better!

    Having pigs is a blessing for utilising undesired garden produce. Especially beet tops and the inevitable excess of bright chard. I might chop up beet tops once a year and sauté with butter & garlic to mask the taste for a pretty side dish. Usually ends up in the slop bucket!! 😆

    My old house was in an HOA. I had a nice size backyard. We moved in before the neighbors. I had 2 dump trucks deliver good soil and compost. I put it all over the back yard, except for where we expanded the patio and a small area for our son to play. I planted roses, tall grass, and fruit trees along the boarders, to fill in. Then I put a 20 x 20 foot raised bed garden in. Picture it as 4 rectangle raised gardens with 4 square boxes in the middle, being able to walk in between. I put in a trellis on each side and near my back door, I put in 1 more square box for herbs, radishes, onions, beets, spinach and chard. I filled in areas with butterfly bushes and native plants. I installed a drip irrigation and 4 rain barrels, covered by boxes we made out of use pallet boards. By the time neighbors moved in, the had no clue I even had a garden back there. They could not see enough into my backyard and I never said anything. HOA would have had a field day. No one knew until we moved and the realtor posted pics online. We put flowers and decorative grass in the garden boxes when we left and it was the number 1 feature complimented the house on! I had enough vegetables to share with people I worked with and the few neighbors who knew but kept quiet! ;)

    Chop your basil and fill icecube trays with the cuttings. Top the trays off with olive or avocado oil. Freeze, dump out the trays and put the cubes in a Ziploc bag in the freezer. Keep making them and add it to the bags. Use for sauces and to flavor veggies. You can always do the same with water for drinks. You can do this with any herb.

    I've been making basil tea like nobody's business. You can use fresh for that, or dried. It also freezes well as-is, and just turn it into whatever cooked thing you want after pulling it out of the freezer

    Love seeing everything! My whole plot (house, front, and backyard) is around 7500sq ft, but I still love gardening. I have never even grown a fraction of what my family eats in produce a year, but I do love supplementing our diet with home-grown goodness.

    I’m growing in a community garden in a 15’ x 10’ bed, and 9’ x 12’ bed and I’m growing a ton of food!! Cucumbers, tomatoes, zucchini, beans, watermelons, jalapeños and flowers! Exciting to see how much I grow!

    Our favorite way to save basil is to make olive oil basil cubes. We chop up the basil, put it in ice cube trays and cover them with olive oil. We then freeze the cubes. Once they are frozen we put them in a freezer bag and use them to sauté all year.

    First year gardening. Deer ate my tomatoes leaves, okra leaves, purple and green bush beans, sweet potatoe leaves. The heat destroyed my squashes. But I was able to harvest long green berms, sweet peppers, chili peppers, green onions, cilantro, morning glory, mustard greens, mix lettuce, a few tomatoes before the deer got to them, lemon grass, herbs, cabbage, long cucumbers. Started to plant bok choy, spinach, and other greens but the chickens keeps on getting to them. This fall I’ll be getting a good fence up. My garden will be moving closer right by my house. Hoping next year will give me more and control others.

    When I have an abundance of herbs and nothing specific to make with them, I like to make flavored salts, sugars or compound butters. We really enjoy parsley butter on noodles. I make it up and then freeze it in little pucks that are easy to add to any recipes.

    Your cabbage looks good. With my red cabbage I cut it like slaw and added cowboy candy sauce and it was so good canned stayed crispy. So so good. Has the hot and sweet yummy.

    my garden looks sad compared to yours; i live in northern ontario canada and we are at the mercy of mother nature, hail/frost etc etc. I fight every day to keep things growing. Yours is so beautiful; i just pray my tomatoes,onions,potatoes, beans and carrots and peas give me as much as yours

    you should try New Zealand Spinach if you want a lot of spinach in the heat. I have 4 plants and that is all I can keep up with for 2 people.

    I’m excited to get home to my garden. I am spending three weeks in Vegas with my son and granddaughter since he had no daycare and this is the only way he could get his daughter for the summer. My daughter and daughter-in-law are tending the garden and freezing most of my stuff for me so I can process it when I get home.

    I have a garden space of 10’X8’ and 6 planter beds averaging about 2’X3’. My lot is only 3300 sq. Ft. So my garden space is limited. I try to maximize what little space I have outside for my rabbits, chickens, dogs, and garden. I can only dream having a huge garden space like yours! Love your videos!

    I would swear your garden was so much bigger. I wish my onions looked like yours. I keep going and try to do better and this year they are better but still a bit disappointing. Our soil is so sandy. Amending is such a challenge to get it to hold moisture and nutrients even with layering wood chips, grass, straw and leaves and cow manure.

    Rachel, freeze dry that basil. All herbs are beautiful freeze dried. When you cook with freeze dried herbs they taste just like fresh! I pull the leaves off the stems put them in a Ziploc, squeeze the air out and throw it in the freezer. I just keep adding to the bags until I have enough to go along with something else to freeze dry. I freeze dry my greens that way, basil, thyme, oregano, cilantro, dill, etc. My favorite way to preserve my herbs both culinary and medicinal. Give it a try and you'll never do it any other way.

    You are so inspiring. I am trying to figure out how to grow in my very small back yard. I live in a townhome community so there is not much space. How powerful it must feel to grow your own food. I did plant mint and basil in a pot at my back door. I try and eat some daily. But I want to do more. Thank you for sharing.

    What a beautiful harvest of goodness. Put some some basil in your spaghetti , and pizza sauce. I replanted the end of a store bought celery bunch, and yes, it is growing, I just stuck it in the ground and watered it.

    I chop my fresh basil and thyme, freeze in ice cube trays in olive oil. After they are frozen I store them in ziploc bags. Very convenient to pop an cube or two when cooking.

    I always keep basil w stems and root it...I can keep it going all winter by placing it in my sunny kitchen window!

    Amazing harvest! My garden is pumping out the produce, as well. As Murphy would have it, I got Covid right when my garden started producing. I am sooooooo behind in preserving. Happy canning!

    YES to Malabar spinach. My first year planting it and I’ve already frozen 3 gallon bags and eaten so much fresh in recipes and salads. It’s delicious and looks awesome trellising !

      How many plants did you plant? I have the seeds and plenty of time! I’m about to rip out my dying cucumbers to put on my arch trellis but don’t know how many to plant?

      @@jksatte the taste raw is more lemon tasting to me but cooked it's more like traditional spinach. The leaves are large and very crisp. Delish!

    I have always used every park if my yard to garden on the back side of the house along the house I plant tomatoes and have grapes peach tree apple tree in the back 5 raised boxes and hudge pots along am back fence mixed in with flowers and bushes another peach tree and apple tree you can grow alot in your yard if you just use different ways. I even move in lemon orange and my lime trees every year and a big banana tree. Love watching love gardening. Been in kitchen for 2 weeks canning dehydrating vaccuem packing alot if work but worth it!

    You could freeze dry your basil and crunch it all into one mylar bag and will be there when you need it down the road. You could use it dry or rehydrate it and make more pesto when you run out.

    It looks like I may get enough for a couple salads from my first garden. I am doing the vertical planter. I'm in Michigan and can plant some seeds for a fall harvest. I'm just happy I haven't killed the plants. lol

    I have made some zucchini boats you scoop out seeds, brown some sausage, mix of peppers and onions cheese on top, maybe rice too,bake and eat, yum, yum., great harvest. Nancy from Nebraska

    My kitchen is pretty small so I harvest vegetables one at a time. Today is pickle day, I made ghee for the first time this year. I love this time of year but it’s busy, busy! Usually by the time the fruit trees ripen I’m already burned out on canning but I have a freeze dryer to reduce the amount I have to can so that helps.

    I dry my basil and most herbs. Dry had a ton more flavor. And then I fill jars and have it all winter.

    I have 8500 square foot. Don't forget the house take place!! My garden is 22x28 foots. It is big for my backyard, if I expand it, my kids won't have much space to play.
    Next year, if I expand it, i would have to do it in front of the house. We can have a vegetable garden in front of the house where I live.

      @@aarifaamos exactly.. I have a big dog, 2 kids, a chicken coop and a bif garden... plus some rasberry, bluberry grapes etc. And for all of that I have a sheds full of stuffs. I can expend the garden but not without having a negative mpact for my family. And my backyard if way bigger than my neighbort.
      I reallt love Rachel, but for that she is wrong. And average is... an average. Some poeple gave 70 acre and some have a balcony. That's why the average is 6000 square feets. And 600 square feet minus the house, the shed and the playground is not a 42x42 garden.

    I freeze basil in flat bags and chop off what i need. Same process with dill using rubber bands to bunch like a smudge stick.
    We are fortunate if we have 24 ft deep for a backyard. When I had a heritage home, the yard was massive and allowed a proper veg garden.

    Ha ha, last year I grew celery for the first time and had 5 or 6 plants and had celery coming out of my ears. This year I'm struggling to get it going. My cucumbers & green beans did terrible, my fault, but I just started a 2nd round of both. What a great harvest you got! I sent the family a picture of my kitchen counter with all the veggies and told them it's like a grocery store here, only everything is free and taste better lol

    With the basil I'd dehydrated or freeze dried. Then put the dehydrated basil in My Spice jars.

    My problem is we don't have enough sun on our property to even grow anything in containers. The front yard has a small area that does get sun, but the deer would eat it all. But no need, the area available is so little, it wouldn't feed us for any real length of time.
    Would love to have a homestead, but we both work so not sure who would do all the work needed. I just can, dehydrate and buy as much as I can to build our preps up. And pray. Praying is the number one way to prepare.

    I love this. It’s almost Thanksgiving and I’m already missing my garden. As soon as Christmas is over I’ll be almost ready to do my starts!! I’m already getting excited about next year. Even in the heat of Texas I’m in my garden everyday. It’s definitely my happy place!! My kitchen looks like this from May-October. I’m not kidding I had yellow squash until second week of October this year.
