You’re talking my language, Rachel! I made potato soup for my sick sister-in-law yesterday from my home canned potatoes. I also canned pears from our trees and made pear juice from the scraps as I call it. Nothing better than your own food!

It made me think of the beef roast we had leftover in the fridge. I cut it in small pieces and made a shepherd’s pie. My husband made it in the sous vide the other day.
Oh geez, i am Portuguese, and soups were the main sustenance meal special in the budget when I was a kid . You call it , from potatoes to beans or even greens .. Portuguese people live in soups , and I have to confess I dislike soups 😂 funny, but yeah! And the killer is bread ! We love bread with every meal, no matter what it is ! We’ve always been simple meal eater like you two. No one needs all that food and all those leftovers! It’s just not necessary. As long as your diet is balanced….. We’ve not used our sous vide machine in quite some time either. Maybe ribs this weekend? Looked great Todd.

Miss what’s for dinner. I grew up with veg, meat, starch too. I made dinners like that when I was first married. Now we are knocking on 50, never had kids. We eat how we want. Sometimes its like what you do. Steak and side salad. Rarely do we do take out.
We like your taco dip for dinner too. We call it bean dip, I mix shredded cheese in mine and stir it in. It's a good fun dinner and in my opinion it's a full meal. You have your protein and grain. If you wanted to add a veg then just top with some lettuce and tomato.
We just had a whole hog processed and I got one whole ham cut into steaks. It is so nice to just heat through a steak and some sides for a quick dinner.
I grew up needing a snack to hold people over, a salad, a fruit, a veg, a starch, crudite, and a meat. And a dessert. It was so stressful. My Mom bought the food pyramid, good wife schtick hook line and sinker. I serve healthy food I have with meat we might have raised and sources locally. One or two items, and done. Dessert is for special occasions or other people's houses! Lol.
I knew something was missing. Old habits are hard to break. 2 sides. We usually have leftovers for next day. Extra plain rice side tonight will be stir fry rice in couple days. Your potato soup looks yummy and very filling.
The way plastic gets into our foods. and water, is through heat, acidity and time. I use sous vide, but I always use silicone bags. I know they are not completely plastic free, but a big improvement from fully plastic bags. To vacuum seal in them, I purchased a gallon size Food Saver vacuum zipper bag. I fill the silicon bag with the food, and put it while still open in the Food Saver bag. I seal the Food Saver bag and while it's still sealed, I press the seal on the silicone bag. When I open the Food Saver bag, I have a vacuum sealed silicone bag. I have steaks in the sous vide as I type this. They are in silicone bags. You may want to consider something similar if you want to avoid plastics.
I had for years made a protein, a carb and a least two veggies and a dessert, all the while my kids were growing up. I have changed and keep it pretty simple. Especially for my husband who only eats meat. He is 100% carnivore. At 73 he can put 20 year old men to shame with his strength and energy. He is 5’8” and weighs 137 with perfect lab work.
Sad salad soup tonight for us. I used veggie soup as the starter, two pints of hamburger and a huge restaurant size bag of limp lettuce. Sounds bizarre but its so good my kids love it.
I apologize .....I don't normally leave comments even though I watch your videos all the time. I left my first one right before the ribs were served and I hadn't heard your closing comments yet. Well Rachel- while I think that you meant that you limit the side dishes and kept the presentation more simple I truly felt defensive of you and all the work you do IN ADVANCE of a meal. Homemade sauces, and soups, homegrown produce, and juices just in this video. I might put a few cherries in a bowl for dessert...you added yours to the barbeque sauce and it is "hidden.' I hope this comment comes across with the love and respect I intend...and know that I would jump at the opportunity to eat any of your meals. Thank you so much for all the inspiration!

I would put this mixture into a corn tortilla and fry it into a crispy taco or replace the beans with potato and then fry it into a crispy taco. My family loves it. I insert lettuce and tomato before eating! 😋😋😋😋😋

I would love to try and make a version of that taco dip. It looked so good but I don’t like beans. Is there anything you would suggest to add instead to give it some sauce and not be so dry?
With no beans. I would take meat and onions, add in a a cup or two of heavy cream, and then the cheese. Let is all simmer and blend for a bit until you get the thickness you want. Cream will thicken it up more and more the longer you cook it. So at some point call it done and remove from heat.

The pan is cast iron and after he cleaned it, I believe he turned it upside down on the burner to dry it off before using it again or to store it.

I'm the only person who eats sour cream in our house, so I freeze dry it then store it in the freezer. Works great!
