I have a similar marinade but use lime on flank or skirt steaks to make tacos and other Mexican dishes. Hot grill and a quick sear.

It is a good combination of acid, oil, herbs and spice. Citrus juices do wonders on tougher cuts of meat.

You can't screw up for a beef. Great marinade. Chris? It's got to be done medium rare. If not you killed the cow twice. 😅
