What do you like to add to your sausage gravy?
I like adding chicken broth or chicken bouilion to mine
I use "HOT" breakfast sausage from my local farm market where they make their own blend. I make a roux, add milk slowly to cream the gravy. I add hot Hungarian paprika and cayenne pepper. Serve on biscuits made with lard. I was taught to cook by my nanna from Missouri and the only changes I made was turning the heat up to eleven

I like the spice too. But instead of cayenne, I slice fresh jalapenos very thinly & add them in. I also make a jalapeno jelly that's awesome on biscuits.
Edit: haha! I hadn't got to the part of the video where they use a pepper as well.

Sometimes I use chorizo instead of sausage for biscuits and gravy. It's amazing.

Butter and whole wheat flour for the roux, with Mccormick Montreal steak seasoning added and vitamin D milk Damn good gravy.
McCormick Montreal steak seasoning is a great multi-purpose spice blend. It is great on sautéed vegetables as well. People shouldn't assume that it is only for steak.

Beef stock or black coffee can be used instead of Worcestershire sauce as well. I prefer beef stock (a tablespoon or two) in mine. Comes out really close to Bob Evans style when I do it like that. I find that the sausage gravy on its own isn't enough. It needs umami.

Sausage gravy cooked the same,all around the country,are there different ways to cook the gravy.
I have never heard of adding rotel tomatoes to sausage gravy. That sounds almost as disgusting as adding hot sauce or hot peppers. Sausage gravy is supposed to be savory not spicy. I make mine with bacon grease, flour, whole milk and cream, plain drained sausage, sage, thyme and some crumbled bacon. Salt, pepper, hot sauce or anything else can be added to taste at the table. It's perfect over biscuits, hash browns or country potatoes and topped with a fried egg or two.
Many people use hot breakfast sausage to make this gravy. It’s really no different than adding a lot of ground black pepper which is also very common or adding in cayenne. Any dairy based gravy/sauce will greatly reduce the heat of pepper due to the casein in dairy hence the reason most people add much more black pepper to sausage gravy than they would, for example, a tomato-based sauce.
I do agree with your sentiment about adding tomatoes to gravy. Doesn’t sound very appealing.
Please don't use pre Ground Nutmeg for anything. The difference between freshly grated and the CRP sold in grocery stores is night and day..!

Lol. Don't put lemon juice in your biscuits and gravy. BnG is a super simple dish and really doesn't need all of these suggestions. Black pepper, garlic powder, onion powder, and the salt from the sausage is enough seasoning, really.
I had a friend who would add cream of tartar to her gravy, it was one of the most disgusting thing I've ever had.
She insisted she was taught that by professional chefs from Europe. My response: "I can see why they were kicked out of Europe then..."
