  • Baking sourdough bread is a since for itself. Many factors can influence the outcome of your bread. Flour type, flour brand, water, temperature...tiny differences might result in a big change regarding your result. Even when baking the same recipe with the same ingredients at the same temperature...you sourdough starter might just not feel like it that day. At the end...sourdough is a living thing and we also don't feel the same each day. ;) But don't let yourself discourage. Keep baking and trying. Combine different flour types and try different brands. Baking is experience and you can't get it until you bake.

    其实一开始不喜欢吃欧洲的面包,后面慢慢觉得啃那种硬壳的面包才香。就像肉夹馍其实那个皮也是脆的

    看你上次酸面包的视频,第一次做面包就是酸面包🤣真的很喜欢欧包的口感,里面QQ的,还有麦香也没有酵母味。从冰箱拿出来在平底锅加热就会变得香脆,搭配cheese+jam, 完美😋

    請問小胡,我看過有配方用Einkorn flour, Spelt flour, bread flour 做的sourdough, Einkorn flour 很難買。用了這個麵粉口感會不一樣嗎?

      用別國的麵粉跟自己地方產的麵粉做出來一定會不一樣,味道可能些許不同

    Sourdough bread is such a mystery to me😅Can I use an overturn stainless steel pot and do I need to place a cup of water in the oven while baking?

      If you have a big stainless steel pot you can use it as a replacement for a dutch oven! In that case there is no water needed. 😊

    Hi Hu I don't have cast iron wok and my oven highest temperature is 200c ,I wish to do your sourdough,please advise,many thanks.

      Hello Crystal! Best you can do is use another big pot (stainless steel) and use it upside-down. It's important that the pot is big enough so the dough won't touch the surface. Just place the pot in the oven, heat it up for 15 minutes. Then place the dough on parchment paper and place the pot over it upside-down. Just try it on 200°C first. It might result in a flatter bread, but it will still be tasty!

    Hi. I follow your recipe here, keep the dough overnight in the fridge and bake my bread the next morning but my dough never rise in the oven while baking. What happen? Any advise?

    看起來依舊很硬,(對於西方人來說應該算是很軟了)國外的麵包都是很硬很粗,中國人大部分習慣的麵包是那種吃起來吐司軟硬度的麵包
