Correct, your thread will be just to the edge of the peel. We used a blanket stitch so it will cross over your fabric to keep your shape in place. If you take a look at the 6:10 mark on the video you will see this better.
lisa abreu I think it just looks that way because she was only making one. When you make a bunch from the same fabric you can put them much closer together before cutting.

We used a 10D edge foot for our orange peels.
