  • Oyakodon is a popular dish of succulent pan-fried chicken thigh, tender onions, and silky eggs served on top of fluffy Japanese steamed rice. This humble rice bowl is cheap, quick to make, not to mention delicious!

    INGREDIENTS:
    - 200 g boneless chicken thigh - skin-on, bitesize pieces
    - 1 pinch salt
    - 1 tbsp all-purpose flour
    - 1 drizzle cooking oil
    - 100 g yellow onion - thin wedges
    - 50 ml mirin
    - 10 g light brown sugar
    - 100 ml dashi stock
    - 1 tsp Chinese-style chicken bouillon powder
    - 2 tbsp soy sauce
    - 3 medium egg - room temperature
    - 2 tbsp shredded sushi nori seaweed "kizami nori" - optional, kizami nori
    - 2 tbsp Japanese wild parsley - optional, mitsuba, or chopped green onion
    - 2 portions cooked Japanese short-grain rice

    oh nice! i saw some recipe cooking the chicken in dashi, i actually prefer frying up the chicken first like this, this video shows it can be done

    There is no reason to use flour with the chicken.

      It's not essential but I personally do it because it improves the taste and texture of the chicken... so there is a reason.
