Butterfly-pea (Clitoria ternatea) flower tea might have worked as a natural blue colouring.🤔 You'd just have to skip the lemon juice to avoid turning it purple… (Red cabbage extract would also work colour-wise but wouldn't have been the best option if it imparts some taste to the liquid.)
Butterfly-pea is a great idea! I'll try to use that next time! If you want to do the milk clarification method you will have to acidify the tea so that the milk proteins clump up. But after its been filtered, you could just neutralise the acid with some bicarbonate of soda and then the butterfly-pea extract would stay blue. It would be interesting to try as it should work. My only concern is how much of the bicarbonate of soda you would need, and if it would change the flavour of the popsicle🤔 I might try it one day if I ever buy the Butterfly-pea stuff.
@@jakeslife4152 Yeah, sodium bicarbonate shouldn't have a strong flavour but might become noticeable if a lot of it has to be used. 🤔 Blue spirulina might also be an idea to try but it seems too blue so some yellow or green would have to be added and I don't know how it tastes…

Hey hey, was just doing some research and realized that Qingxin technically is real though it is the name of the tea made from a plant even though said plant may not look like our genshin flower. Qingxin is essentially just oolong tea and after realizing that the effects of qingxin or oolong tea include calming stress/anxiety and improving brain function, it makes a lot of sense. I saw someone also recommend using butterfly pea flower for color and that's an amazing idea seeing as that also can have calming effects

Thank you so much for this tutorial! 💙 edit: i am making them as we speak! the milk coagulation strategy worked pretty well, there was a little bit of yellow tint left at the end as i made it out of mint tea in the beginning, but i will make sure to experiment with the proportions next time and see if i can get a clearer solution! i also want to try making it with the plant in the future instead of tea filters :D i'll make sure to update on the taste once they're frozen (had a little leftover too so i made ice cubes as well, they look very funky and blue) edit #2: I tried a little bit and IT TASTES SO!!! MAGICAL!!!! So minty and elderflowery, it's really an amazing combo! The colour turned out so beautiful too, the different layers of ice crystals also look so cool when i hold the popsicle up to sunlight!!

Yes there are lots of options! You can really use whatever flavour juice/cordial you like, I just chose elderflower as it looks like the Qingxin. But specifically, I would recommend apple, cherry or orange juice/cordial, as they all pair nicely with mint.

Yeah they are basically a refreshing block of ice😅 To get the soft texture of normal popsicles you need to add a lot of sugar/syrup, but I didn't want to do this because I wanted them to be a bit healthier and lighter (As Chongyun does eat them all the time, so if they were full of sugar he would be a chunky boi)
You can just omit the elderflower if you don't have them and you will still get some great tasting popsicles😋 Just remember to add some lemon juice and sugar to sweeten the mixture before you freeze it. If you really want an alternative, I would recommend adding some concentrated apple juice to the mixture (Taste it as you go) Also, have you tried looking in the tea section of your supermarket? Sometimes they sell elderflower tea, which you could add at the same time as the mint leaves and just do the recipe as explained in the video (Remembering to add lemon juice and sugar at the end to your taste) I hope this all helps!

Hi! Are you lactose intolerant? Most of the milk is filtered away, so you might be able to use normal milk as you won't actually be eating any of it. Maybe you could try a small batch first and see how it goes. Any alternative milk that curdles (Goes lumpy) when lemon juice is added should work for this recipe, but I haven't tried any myself. If you want to try one of them, I would suggest that you take a little bit of milk (E.g. Almond/Oat/Coconut) and add some lemon juice to it. If it goes lumpy it should work in the recipe, so you can try it in a small batch. If that works, scale it up to a full batch and enjoy lots of popsicles!😋 Also, thank you so much! I got mine from my supermarket, but that might just be a British thing. You could also try using elderflower tea if you can't find any cordial, or just omit the elderflower entirely and they should still taste quite good.
I can fully understand the concern, but you can't taste the milk in the final popsicle at all! They use this technique in fancy cocktail bars to make clear drinks and they wouldn't use it if it tasted bad. So if you have time, I'd definitely recommend giving it a try! The process is like a little science experiment, and you get some great tasting popsicles at the end😋
They are pretty refreshing and not overly sweet. Exactly the kind of popsicle you would want for a hot summers day! The main flavour you get is the mint, the lemon juice makes it a bit tart (Not overpowering though) and the elderflower cordial adds a nice floral note to it, along with a some subtle sweetness.

Does the final popsicle get any milky flavours from the purification process?
None at all! Its quite surprising how it works, but you can't taste the milk at all
Some of the whey will be in the tea but it doesn't have a strong flavour, alternatively you could use mint essence/extract
