She works there. Dude next to her is the same. They know. They have that "Oh, happy times, we get to watch Coach be peak Coach." The missing part in this clip is when it's finished, he tells the teens to come to his gym so he can help them.
Edit: Rephrased it a bit, originally it could have sounded like he was encouraging the employees to come to his gym.

It's honestly a lesson that more people today need to learn. It's presented in a dramatic fashion because it's a movie and all, but his refusal to sit idly by is fantastic. His doubling down and humiliating the wannabe thugs is legendary.
