Get a kett saw with vacuum attachment , I use one everyday for cutting flood cuts in moldy drywall. They work amazing and super fast.

I would put in new sheet rock but check behind that wall for any cracks of leaks mold spread around
Possibly hot humid dryer air into the wall causing duct work to condensate dripping water
Definitely need a humidifier for the molding new plaster
