I use this method and then place it in the electric smoker for 5 hours at 225. Comes out amazing. We raise our own pigs so I used our bacon which is very thick and hand sliced. AMAZING!

The RUclips channel "Epic Meal Time" is credited to have created the bacon weave for this type of application. Seems that a smaller version has been used for decades for making BLT sandwiches. Love those Saber side burners.

I have no spit. Regular bbq. I have been marinating my pork in a nice bbq/apple cider soy sauce. Will be placing smoked gouda inside pork before my I wrap in bacon and twine. How long should I cook it for and what temp? I was thinking pre heat grill at medium and turning it every 5 to 7 minutes with some baste.

I don't trust anyone who has a kitchen that looks that clean . I'm not sure if I was watching cooking or a medical procedure.

I lay out my twine and build the weave on top of it so when I flip it, it's ready to be tied

My issue with doing this is getting the bacon to get done enough when the roast finally comes to temp.

I think it's important to note as well...get good cuts of bacon..thick cut too.
I tried this with some cheap ass bacon and it's a mess..

Oh this is about the brand grill you are using more than about the recipe- I get it.

    What if I don't have a spit? I have a regular charcoal grill:/

I use a charcoal grill. The beautiful part about a charcoal grill is being able to add wood and smoke the loin low and slow.
Put the coals to one side to use offset indirect heat. Be sure to put a drip tray with water in it as that will help maintain a good low temp AND maintain moisture inside the grill...prevents the meat from drying out.
Add your favorite wood chips to the top of the coals and maintain a temp of 250-300 F. Cook until the internal temp of the meat is 145 F. Always cook to the temp of the meat and not a specific time for great results!

Use your warming rack. If you have a SABER grill, place the warming rack on the roast position. Keep your burners on medium-high.

Just put loose side of bacon down. Don’t need butchers twine! Must be first time!??

should be smoking it and not using a rotisserie.
