* Ingredients
Mutton - 500 gm
For masala:
Fennel seeds - 1/2 tspn
Cumin seeds- 1 tspn
Pepper - 1 tspn
Cinnamon - 1 small piece
Cardamon - 3
poppy seeds-1 tsp
garlic-handfull
ginger-2 pieces
small onion-handful
coconut-4 pieces
mint leaves-few
For Mutton Gravy
Fennel seeds - 1/2 tspn
Bay leaf - 1
Cinnamon - 1
Cardamom - 1
javitri-1
chopped onion-1 cup
Tomato-1
Red chilli powder - 1 tbpn
Coriander powder - 2 tbpn
Turmeric powder - 1/4 tspn
Salt - As required
Curry leaves
coriander leaves-few
Oil - 3 tspn
தேவையான பொருட்கள்
மட்டன் - 500 கிராம்
மசாலாவிற்கு:
பெருஞ்சீரகம் விதைகள் - 1/2 தேக்கரண்டி
சீரகம் - 1 டீஸ்பூன்
மிளகு - 1 டீஸ்பூன்
இலவங்கப்பட்டை - 1 சிறிய துண்டு
தக்காளி-1
ஏலக்காய் - 3
பாப்பி விதைகள் - 1 டீஸ்பூன்
பூண்டு-கையளவு
இஞ்சி - 2 துண்டுகள்
சின்ன வெங்காயம்-கைப்பிடி தேங்காய் - 4 துண்டுகள்
புதினா இலைகள்
சில மட்டன் கிரேவிக்கு
பெருஞ்சீரகம் விதைகள் - 1/2 தேக்கரண்டி
பிரியாணி இலை - 1
இலவங்கப்பட்டை - 1
ஏலக்காய் - 1
ஜாவித்ரி-1
நறுக்கிய வெங்காயம் - 1 கப்
சிவப்பு மிளகாய் தூள் - 1 டீஸ்பூன் கொத்தமல்லி தூள் - 2 டீஸ்பூன் மஞ்சள் தூள் - 1/4 டீஸ்பூன்
உப்பு - தேவைக்கேற்ப கறிவேப்பிலை கொத்தமல்லி இலைகள் - சில
எண்ணெய் - 3 டீஸ்பூன்
Procedures :
Blend all the ingredients for masala
With required amount of water to make a fine paste. Grind and keep aside.
In a cooker heat oil and add whole garam masala,onion,salt saute well.
Add ground masala and cook well.now add tomato,curry leaf,coriander leaves and cook until tomato softens.add chilli powder, coriander powder and mix well till raw smell gone.now add Mutton and mix well.cook for 2 minutes.
After 2 mins add required water to adjust consistency and mix well.cook for 5-7 whistle and serve.tasty Chettinad Mutton Gravy ready.
