To add more greens I’d recommend frozen spinach! It’s much more affordable than fresh and greens are an essential part of our diet. Very thoughtful video!
Back in the mid ‘80’s, in nursing school, we had to come up with a meal plan for a family of four for a week with just $20. From what I remember, they were eating a lot of peanut butter and jelly sandwiches and pasta. There were more healthy foods but those stuck in my memory. It really takes a lot of thought. You did a great job with this, Derek.
It does take a lot of thought and planning. That is an interesting lesson you had in school. A 4 day meal prep with $20 CAD would be hard and lack variety for sure. Thanks for the comment!

Because of you I eat tofu using your different marinades, cook my own chickpeas, beans, plant based pastas, made my own tomato sauces. I would love to actually buy a book form of your recipes, not crazy over e-books, love leaving through the pages. Again, a big thank you, your a great inspiration even for a 70 yr. old.
You're amazing! Just an idea... I bought the e-book and then printed it out and put it in a binder. I love being able to grab it off the shelf when I need a good Simnett recipe!
If you're gonna add water to your tofu and chickpea mixture, you might as well omit the straining of the chickpeas. The liquid is packed with additional protein. It's called aquafaba, it is usually talked about when baking, but it works great in food too. When cooking something that needs water or any liquid that will get reduced anyway, I'll always add the chickpea liquid.
The only thing about that liquid though is that it has a lot of extra insoluble fiber. Rinsing your beans can make you less gassy. It does have its uses tho

I dont need to budget for food, i have the money, but figuring out what i should make or buy at the store is what i struggle with so i appreciate these videos a lot. Before i started watching you i was so lost. Im not even vegan but i want to eat healthy.

I meal prep every week....3 weeks on Sunday = no cooking for the rest of the week! Definitely worth it. The amount of sodium in your prep is far less than if one were eating take out, salty snacks, etc. I am gratefully able to afford to add greens, nuts, seeds to add to the nutritional value, but again, these meals are far more nutritionally dense than the standard north american diet. Well done!!
Two pieces of feedback since you asked! Get yourself a wider variety of frozen veggies (California blend, frozen corn, frozen spinach...). And how about some handheld foods/meals on the go for folks who are not sitting at a table for breakfast & lunch?

You can cook rice the same as you cook pasta, then toss out water with a good portion of the heavy metals all rice carries with it. It cooks just fine. These recipes rock.

Would be great if there could be a recipe book full of budget friendly vegan recipes so those struggling from financial hardship could eat nutritionally and their health, all aspects of their life could improve ❤
Best to cook brown rice in loads of water and then rinse with boiling water at the end. Rice is especially susceptible to taking up arsenic from its growing environment and this process reduces the risk. I believe Dr Greger has examined this at some length. Another great video though.
I checked out the exchange rate & $45 us would equate to $70 Australian,but that amount of food & what you purchased would cost aboit $90 here in Australia.i find that i need fo shop at a few different stores to get the best value for what i usually purchase.i toowould have loved to see more raw fresh fruit n veg,but thats how it goes .you did a great job,great idea doing meal plans & budget vids.great vid.💚🌿✨

We eat **almost** entirely plant based (my husband eats dairy and we'll occasionally have fish) and average about $12 per person per day. Mostly organic! It's easier in the winter - because we eat a LOT of homemade lentil/bean based soups :) And onions/garlic/dried beans or lentils/a veggie or two is a cheap way to have a hearty and healthy meal! I'm allergic to dairy/gluten/soy which definitely drives the cost higher than I'd like, but we do our best!
You got really close to a bolognese with that pasta sauce. It's a delicious sauce which is pretty easy to make and offers a different flavor for someone that might be tired of regular pasta sauce
Next time I need to get myself groceries I’m following all these except cutting the fat. I try to do low fat high carb and it’s working wonders for my diabetes. Trying to up my insulin sensitivity. These looked so delicious.
I spent a year thinking i was adding too much salt to my plant based diet, only to find out i was prefectly in the middle. And I'm talking 2 Tbsp per pound of soaked beans type of ratios. If you're eating mostly non processed foods you don't have as much of a need to worry about it, outside of pre-existing hypertension. Once you get away from these processed food sodium levels it is absolutlely mind boggling how much salt you can add to your food and still be in that healthy range on your blood tests.
I don’t know why you keep apologising for the effort involved in these recipes! I think you’ve done an incredible job keeping them super simple and easy. Going to definitely try the frittata, can’t believe you fit all that into the tray 😂❤
It is difficult, I get it! I planned my meals and used the Walmart website to calculate costs so I wasn't surprised when I got to the register. Planning meals using the website cronometer is really helpful too! You can see nutrient breakdowns and make sure you are getting what you need.

I am a vegan, though i eat beef and lamb occasionally and fish and chicken once in a day. Don't drink milk but drink yogurt and love ice cream and cheese with Bacon. Living this veganlife for a while now

And the frittata looks 🔥🔥🔥 The nutrient breakdown is so helpful, these are my exact calorie goals! I’ll definitely be making them for the next time I prep meals! Its also awesome to know they can be frozen. Its always so hard for me to figure out how to incorporate veggies and fruit that I need into my meals without them going bad first so I really appreciate you sharing meals that keep those things in mind. I totally appreciate that there is an audience for this kind of meal prepping, but this isn't my thing. Mainly, I just can't imagine eating the same thing day after day... and I really love cooking. : ) Another idea for getting organic produce on the cheap: talk to the produce people in stores to see if there are any about-to-go-off organic produce that they're going to get rid of. You'd be amazed at how much produce (especially organic!) gets thrown away!

Derek, do you have an Instapot in your kitchen? Cooking dry beans is so quick and easy. 50 mins/ unsupervised and they’re done. Cheaper but also healthier if you get organic beans.
I’ve been cooking a blend of sushi rice (short grain) and quinoa in my rice cooker to curb the calories and increase the protein a little. The ratio I do is 1 cup rice 1 cup quinoa with 3 cups of water., and cook on the white rice button / setting. Let me know if you like this hack! 😅
Please make a video where you chop veg and make sauces and rice and tofu etc for prep and use the prepped items for meals? I hate eating the same thing day after day. Like black beans, chickpeas, onion, washed greens, chopped peppers etc and make main meals out of them? I think you have a couple already but I couldn’t easily find them.

It also can act as a binder like chia seeds too.
I use powdered seaweed for a salt sub. It gives me all the iodine I need. Super easy to make take a sheet of nori and pulverize it.

It's easier in the winter - because we eat a LOT of homemade lentil/bean based soups :) And onions/garlic/dried beans or lentils/a veggie or two is a cheap way to have a hearty and healthy meal! I'm allergic to dairy/gluten/soy which definitely drives the cost higher than I'd like, but we do our best!

You got really close to a bolognese with that pasta sauce. It's a delicious sauce which is pretty easy to make and offers a different flavor for someone that might be tired of regular pasta sauce
Next time I need to get myself groceries I’m following all these except cutting the fat. I try to do low fat high carb and it’s working wonders for my diabetes. Trying to up my insulin sensitivity. These looked so delicious.
I spent a year thinking i was adding too much salt to my plant based diet, only to find out i was prefectly in the middle. And I'm talking 2 Tbsp per pound of soaked beans type of ratios.
If you're eating mostly non processed foods you don't have as much of a need to worry about it, outside of pre-existing hypertension.
Once you get away from these processed food sodium levels it is absolutlely mind boggling how much salt you can add to your food and still be in that healthy range on your blood tests.
I don’t know why you keep apologising for the effort involved in these recipes! I think you’ve done an incredible job keeping them super simple and easy. Going to definitely try the frittata, can’t believe you fit all that into the tray 😂❤

It is difficult, I get it! I planned my meals and used the Walmart website to calculate costs so I wasn't surprised when I got to the register. Planning meals using the website cronometer is really helpful too! You can see nutrient breakdowns and make sure you are getting what you need.

I am a vegan, though i eat beef and lamb occasionally and fish and chicken once in a day. Don't drink milk but drink yogurt and love ice cream and cheese with Bacon. Living this veganlife for a while now

Amazing!!! All of these meals are so approachable and simple that I feel like even I could make them. And the frittata looks 🔥🔥🔥 The nutrient breakdown is so helpful, these are my exact calorie goals! I’ll definitely be making them for the next time I prep meals! Its also awesome to know they can be frozen. Its always so hard for me to figure out how to incorporate veggies and fruit that I need into my meals without them going bad first so I really appreciate you sharing meals that keep those things in mind. I totally appreciate that there is an audience for this kind of meal prepping, but this isn't my thing. Mainly, I just can't imagine eating the same thing day after day... and I really love cooking. : ) Another idea for getting organic produce on the cheap: talk to the produce people in stores to see if there are any about-to-go-off organic produce that they're going to get rid of. You'd be amazed at how much produce (especially organic!) gets thrown away!

Derek, do you have an Instapot in your kitchen? Cooking dry beans is so quick and easy. 50 mins/ unsupervised and they’re done. Cheaper but also healthier if you get organic beans.

I’ve been cooking a blend of sushi rice (short grain) and quinoa in my rice cooker to curb the calories and increase the protein a little. The ratio I do is 1 cup rice 1 cup quinoa with 3 cups of water., and cook on the white rice button / setting. Let me know if you like this hack! 😅
Please make a video where you chop veg and make sauces and rice and tofu etc for prep and use the prepped items for meals? I hate eating the same thing day after day. Like black beans, chickpeas, onion, washed greens, chopped peppers etc and make main meals out of them? I think you have a couple already but I couldn’t easily find them.
