Fudgy Brownie Cookie | With amazing crinkles

    We all love brownies, and we all love cookies - so how about brownie cookies?
    ▶Brownie Cookie◀
    Yield: 7~8 cookies using 5cm diameter scoop
    All purpose flour 50g
    Baking Soda 1g
    Cocoa powder 5g
    Light brown sugar 65g
    Whole eggs 55g
    Salt a pinch
    Butter 35g
    Couverture chocolate 105g (I used callebaut 811)
    ① Melt the butter & couverture chocolate to 40℃.
    ② Mix light brown sugar, whole eggs, salt and whip until you get a slightly lighter colour.
    ③ Add the melted butter & couverture chocolate.
    ④ Add the dry ingredients and mix.
    ⑤ Scoop it out when the batter is around 22~25℃. (I used a 5cm diameter ice cream scoop) and place it on parchment paper/silicon mat.
    ⑥ Bake at 180℃ (pre-heat to 180℃)for 10~12mins. Do adjust the baking time as getting the right fudginess is key for this product. (size of cookie is also a big factor that affects baking time. Larger the cookies, longer the baking time)
    ▶Cookie flattening issues◀
    There are several reasons for this:
    ① Measurement issues: are you sure you weighed out the baking soda correctly using an accurate scale? If you are not using a scale that goes down to 0.1g then it's likely that your baking soda measurement will be off!
    ② Too much whipping (too much air) might cause it to puff up then flatten out.
    ③ Make sure your batter is not runny. Bring the batter temperature down to 22℃ to make sure it's thick enough.
    ④ When you scoop it on to the pan make sure it's not too flat. (you want a nice dome shape)
    ⑤ Make sure you pre-heat your oven.
    ▶How to store/Shelf life◀
    Store in air-tight container at room temp up to 3~4days.

    Thank you so much for always putting up solids good content! I have tried a good amount of your recipes and they’re perfection! It’s great that you mentioned that baking time needs to be adjusted depending on the size of the cookie. This is a constant struggle for me. It would be great if you could dish out a video that discusses baking time and temperature adjustments based on cookie/cake sizes 💜

    It never occurred to me that having grams for things like eggs meant that it would be so much easier to scale a recipe to only use one egg..... 44 years and I never thought to do that

    Thank you! I made this cookies today, it was so easy and delicious! My oven it's a little tricky so i made small cookies to try, they're fudgy! I guess bigger ones would be even better. I also made your brownie recipe, it's the best brownie I ever had, my house smells like chocolate 😁💖✨I love it!!! I'm saving this recipe, it was so confortable to make, no worries at all! 🎉. Edit: I ate one right out the oven (hot) and it was almost like a normal cookie. I let them cool completely and there it was! A masterpiece of a cookie!!! So fudgy!!! And my cookies are so small I thought I wasn't going to get the texture right. So it works just have patience😆🥰

    Here are the ingredients in cups
    All-purpose flour - ¼ cup
    Baking soda - ¼ tsp
    Cocoa powder - a little over 1tsp (1 tsp but not completely leveled)
    Light brown sugar - ⅓ cup
    Whole eggs - 1 large egg
    Salt - a pinch
    Butter - ⅓ cup
    Dark Couveture Chocolate - 3.7 ounces or ¾ cup

    The recipe in the description box cannot possibly be correct. It is certainly not for a dozen cookies, but if the measurements are for a single cookie, we're talking 4 oz (105 g) of chocolate and 1/4 C (50 g) of flour for a single cookie. There is no way that recipe makes sense. Which makes me suspicious of the hundreds of comments that claim perfect results. Also, looking at Hanbit's responses to the most recent posts, he's clearly using a bot. Or maybe is a bot himself.

      it says 7 cookies. Also 50g of flour is much closer to 1/2 cup. They turned out great for me!

    Hi chef, I just saw your VDO yesterday after searching for how to make tart. Your explanation is so clear and easy to work. Today my 3 years grandson asked me to make him cookie then I choosed the brownie one . The result is great and he loves it. Next time I will add some mixed fruits or nuts.

    I just baked these! They came out delicious. I’m in the USA so I baked it at 350 F for 13 minutes. I didn’t have the exact chocolate chips as chef as I had Toll House semi-sweet chocolate chips. These are perfect! Not too sweet either. I will definitely bake again

    I love that you make and show easy and simple recipes that us non professionally trained baker can easily follow.
    This is my partner's most favourite cookie. I usually add roughly chopped roasted hazelnut because the flavour blends so well. It's always a hit when I take it to potluck party too. ❤

    This is by far the best recipe I tried and turned out awesome on the first try. I ak in love with these cookies.
    I also tried some modifications in the recipe - reduced the sugar to half as my Couverture was extremely sweet
    And to make an eggless version I replaced one egg with 1/4 cup Curd in the recipe
    Both egg and eggless cookies came out to be perfect!

    I love how he makes masterpieces using only 4 dishes. My entire kitchen would be covered in dirty dishes with my shirt full of flour 🤣. Nice to see masters do their craft!
