    If you have never heard of Lori Neighbor before, she is a conservative Christian, a wife, mother, grandmother, and a pastor’s wife. She is originally from Northern California and has lived in Mexico with her family since 2004.
    In 2019, at 50 years of age, after a lifetime of battling her weight and health issues common to an unhealthy animal and oil based diet, she lost a total of 58 pounds. Now eating what she calls, “Chef AJ Style,” she credits and loves Chef AJ’s personal twist to Dr. John McDougall’s, “The Starch Solution,” for her own, now trim, healthier self and falling in love again with potatoes and corn.
    Lori started a RUclips Channel and Facebook support group in January 2020 stating, “I Will Never Diet Again,” to help her small group of Christian friends and family who wanted to know how Lori lost the weight and requested cooking videos.
    She’s a home cook who has loved to cook unprocessed since 2009 and had been known for her wood fired pizza, homemade pasta, raviolis, Christmas pastries including French buttery croissants. She now posts healthy simple recipes that she uses everyday and her tips to staying trim. She hopes that sharing her story will help others to choose a Whole Foods plant based diet to regain their health and find their trim self!

    The recipes that Lori would like to share with you today are what she has been eating lately to stay trim!
    Mexican Chilaquiles Rojos Red Sauce
    1 small white onion
    1 clove garlic
    2 Roma tomatoes
    2 guajillo or mirasol chilis
    2 árbol chilis(spicy hot option)
    remove chili seeds
    1 cup water
    Purée
    Bring mixture to a boil and simmer 10 min.
    Lori’s Lazy Favorite One Pot Meal topped with Chilaquiles Rojos Sauce
    1-2 pounds chopped potatoes
    2 pounds chopped zucchini
    1/2 cup frozen corn
    1/2 cup water
    Layer potatoes, zucchini, and frozen corn topping with water.
    Instant Pot 2 minutes on high for high altitude.
    Top with chilaquile sauce!
