- Today we try 3 Michelin star Chinese food! After we filmed with David Beckham in Macao for Korean Englishman we were gutted to not have time to try the local food, so when the Macao Government Tourism Office invited us back we could hardly say no! It's called the swimbladder, though, and it's definitely not what Josh and Ollie were thinking. It's literally a waterproof balloon that has air in it and it helps the fish control its buoyancy and to right itself rather than falling flat or flipping upside down. It is just a very clean air sac, slightly chewy, very flavorful.

I was just coming to post this clarification too. People seem to never clarify that they mean an air bladder when they're talking about "fish bladder."

@@bodyofhope That's funny, cuz as a Brit he doesn't seem like a cartoon character to me, but I do see American youth of this age like cute cartoon characters and often think that British people would like to mass produce them and sell them in their toy stores. Perhaps we're more alive to each others subtle differences as Americans and British and this gives a sureal and vivid quality to our perceptions of each other, a bit like a cartoon character.
It might be a misconception but thinking of what we have heard the etiquette is like while people dine in Michelin starred restaurants, especially one with 3 stars, I'm sure attending to these two gentlemen who behave like kids yet also just genuinely enjoy their food with such astonishment and joy must have been so refreshing for the staff there.
i think just enjoy it as much as you how want, but without the arse-ness of certain categories of patrons if you get me.

If I know anything about working the floor of a restaurant, its that they appreciate immature but gracious guests who are enjoying the food over rich people who get every little piece of etiquette right but treat the staff like dirt.
Etiquette is absolutely secondary to both treating the staff like humans and enjoying the experience.
Michelin restaurants these days are getting very hipster too. I mean, could you imagine Zuckerberg, Musk or Trump eating with old school etiquette?

Back when I was waitering, that was my preferred approach. I hate the cold formal/overly serious approach of some high end places.

I came here for this comment. I watching it on my TV where I can't comment so I opened up my phone just to make sure someone gave the lovely lady serving them some recognition. She seemed like she understood the food and genuinely enjoyed showing people how to eat it. She was lovely! Josh and Ollie were lovely as well! 🤩

Michelin dining is truly an EXPERIENCE, not just a meal. Josh is completely right when he describes it as interactive art. EVERY one of the senses is utilized. ❤️🍽️
I would not trust a tire company when it comes to food. So many times they had to retract a michellin award because people did not like what they ate at a michellin restaurant and felt there are way better chefs out there. This restaurant does look really good though.

Even hearing. One is generally given a verbal description of each course (with all the linguistic embellishments) as well as the pouring of wine, the sounds of knife and fork, a sizzle here, an excited exclamation there...

You’ve Josh looking amazed with everything and then the 101 emotions that cross Ollie’s face in about 2 seconds 😂😂
I love the confusion of the term "bladder" - obviously theyre thinking "urinary bladder" but in actuality its a sack filled with air (think bladder inside a football etc) that allows the fish to control it's depth. Its also this organ that prevents you from returning deep sea fish to the sea - because the pressure difference between where the fish was caught and the surface is enough for the air inside the bladder to expand so much that the bladder ruptures and the fish dies.
If you're interested, the thing with Sichuan pepper is that it has no piperine or capsaicin that gives spice to black and red peppers and that trick your receptors for hot and pain, but it has hydroxy-alpha-sanshool that actually blocks the receptors of light touch!
So analgesic qualities. Yeah I would not categorize Sichuan peppercorn as “spicy,” since it does not hurt at all.
When I get to a dictionary...this will make sense I'm sure.

as a Chinese person in Malaysia that grew up eating food made from many of these same ingredients, have to say that I'm proud and excited that you guys finally get to have a taste of chinese delicacies. There's such a diverse range of flavours and textures to experience that are unlike anything else.
Jolly needs to come to Malaysia and try our street food, mamaks, kopitiams, warongs, a hodgepodge of flavours! They will love it!

I agree, but I also disagree. I've been watching so many Chinese food vloggers and travelers etc. and except for the occasional high-end restaurant nothing I've ever seen before is like this. AKA - another high-end restaurant with small portions that just comes off as pretentious food to "regular" people who will probably never be able to eat there. Know what I mean? Chinese cuisine is SO varied and incredible (I also studied it for a semester at the Culinary Institute of America, along with Korean cuisine) with the vast array of ingredients and textures and everything in between. Hell, one city over in a different province uses the same ingredients in completely different ways. Look at silken tofu, in the North of China it is a salty dish, in the South of China it is a sweet dish. I love that kind of variation. :D

Only recently discovered you guys and have binged most of it now including Korean Englishman and have to say, your friendship and chemistry is unmatched. Hearing Josh speak Korean is so impressive. Ollie's facial expressions are the absolute funniest going. Such wholesome content, and love seeing the episodes involving Gabbie and Juno. Ollie I have no idea how you did that bungee jump, I also hate heights and could not do it. Congratulations on your success and I wish you bigger and better things in the future 🙏

I think the magic of this channel is that Josh and Ollie do things that most of us will never have the opportunity to do. I doubt many viewers will ever eat at a Michelin star restaurant, let alone one with three stars. Most of us will never set foot in Macau or many of the places they visit. However, we get to do these things vicariously by watching them. It's a bit like sitting at the table with a couple of goofy friends who are truly enjoying themselves. Actually, it's more like we're part of the crew who get to watch them eat. We just don't have to hold a camera or worry about the sound and lighting. :)
Ollie is absolutely amazing. I cannot stop laughing at his facial expressions. When he loves it & when he hates it. Such a pure soul. I am here for it! I have come to the realization that my Michelin Star dining experience is vicariously watching Jolly videos. Since watching their Michelin Star dining videos, we have been inspired to find at least one fine dining restaurant in our travels; so far, our experiences set a high bar so to speak when it comes to dining out; we find we have been choosing better quality fresh foods to cook with at home too. I do love Josh's descriptions of both food and art and Ollie's honest and funny opinions. I do like how they share the experience with their crew too. Very nice. I’m glad they previously saw and understand your channel and personality. 4 of us hired a private chef in Sicily. We were having a grand time, being silly and slightly loud. We could tell the chef thought we were disrespecting him as he left in a huff.
