Most of the food in this menu is extremely expensive, and has good nutritional value - these are food that Chinese people enjoy, to an extent, for health purposes. The sturgeon bone marrow and sea cucumber, are both rich in collagen. I would agree that some of those food are an acquired taste to an extent, but also, the process to make some of those food is extremely laborious. To make the bone marrow, sea cucumber and abalone into an edible soft texture, takes many hours of cooking. Most of these foods also don't have much of a taste to begin with, so to cook it in a way that is appetizing, is an immense skill.

I think one important thing to know about Chinese and East Asian cuisine in general is that texture is far more important than in European and American cuisine. Asian people see texture as important as flavour. That’s why there are famous popular foods like mochi, bubble tea, and tteokbokki. Even though those ingredients in themselves have no flavour, they add TEXTURE. That’s also why some Asian foods might seem weird or scary, like fish bone marrow or chicken feet, but it’s because it’s impossible to achieve the same variety of texture just by eating plain old animal meat. Western cuisine focuses heavily on flavour but comparatively deprioritizes texture
Chef Tam, best chef in his country. An absolute honor bestowed upon him. I hope when I visit, I am able to sit at one of your tables and enjoy a extraordinary fabulous meal. I would be honored. He seems to be a warm, friendly, happy and humble man. All good qualities in a person. 🙂🦋

Explains why my immigrant parents love chicken feet. I could never get into it.
chicken feet are delicious. the braised dim sum type… yum
Loved the episode! Everything looked amazing!
Ok now I want to eat Michelin starred Chinese food :)
I want to eat Chinese food, Michelin-starred or not.
I want to eat food.
I want to eat.
I want.
I.
I love the faces Ollie makes when trying different things and the huge bites Josh takes.
I am happy that Josh finally says love you to Ollie, that’s like a dream come true for Ollie as he has been waiting Jian to say this to him for a long time, but I do like their relationship, more than a friend, like a family❤
7:06 I haven't tasted abalone for about half-a-century. It's very rare and expensive in France.
this is great! kudos to ollie trying different dishes from what he's used to. thank you Jolly for such quality content!
Bird nest is literally bird nest but made by bird saliva.. Its expensive af..
I can never get enough of the love for each other and there love for adventure and food.
We can all agree that we love Chef Tam
Chef Tam seems like he is having a great time. Saying that he hopes to cook for you again is awesome. I would feel honored to be in his presence.
Sweet men, so lovely. Respect to Ollie too for the endless "1-in-a-billion" compliments, cause also telling this amazing chef he didn't like a dish, yeah I think it just really sends it home for the compliments. Respect
Jolly never fails to clap my cheeks

Thank you Chef Tam watching and enjoying their experience 🙏👌🏾
중국은 아름다운 요리를 만드네요~
Chef Tam…what a perfectly lovely gentleman……and Luke’s appreciation/reactions are fantastic
I can get on board with Korean and Japanese cuisine, but fine dining Chinese food would be a challenge for me. Too much seafood and unfamiliar textures. I admire adventurous eaters though! ❤
You guys do the world a huge favor by giving us yourselves in such a positive and hilarious way. Thanks 🙏
12:50 JOSH CAN EASILY SAY “LOVE YOU” . SECOND WIFE WINS!
Hahaha jk. Just love seeing this.
