    My Thanksgiving Meal Prep is not as traditional as most. We don’t do Turkey…. But the most important part remains. We Celebrate a Day of giving thanks for all that we have and spend the day together with loved ones.
    Happy Thanksgiving from our family to yours!
    🍁 Thanksgiving Menu Plan 🍁
    Pomegranate Glazed Duck
    Pumpkin/ Butternut Squash Pie
    Hasselback Potatoes
    Balsamic mushrooms
    Sautéed corn
    Candied sweet potatoes
    Asparagus with mustard vinaigrette
    Desert:
    Pecan Pie
    Cranberry Crisp
    Recipes:
    🦆 Roasted Duck:
    S/P
    Garlic powder
    Paprika
    Consommé
    3 Tbsp Soy Sauce
    1/4 Cup pomegranate sauce/syrup
    Tbsp oil
    Stuff with apples, oranges and celery.
    Bake @400 covered for 45 minutes then uncover for additional 45 minutes until Golden brown.
    Asparagus with Mustard Vinaigrette:
    1 pound asparagus
    1 Tbsp Apple Cider Vinegar
    2 Tbsp lemon Juice
    2 Tbsp Dijon Mustard
    2 Tsp Sugar
    1/3 Cup Avocado oil/ olive oil
    Dill
    Parsley
    Scallion
    S/P
    Pecan
    Apple berry crisp recipe:
    Preheat oven to 350 deg...
    3-4 apples cubes
    1 cup cranberry and/or berry of your choice
    2-3 tbspn of sugar
    1/2 lemon 🍋 squeezed
    Add 1 tbspn of flour
    Mix everything together and put in 9 x 13 pan or in 9 in pie pan.
    Topping:
    1 cup of flour
    1 cup of old fashioned oats
    1/2 c of sugar or brown sugar
    Pinch of salt
    Optional Add 1/2 cup of chopped nuts preferably pecans or walnuts
    9 tablespoons of avocado 🥑 oil
    Mix everything together until crumbs hey more combined and sprinkle all over filling!
    Bake for 45 min to an Hr or until golden.
    Butternut Squash Pie:
    Pre- made pie crust/ Graham Cracker Crust
    12-16 oz of cooked butternut squash
    1 cup vanilla soy milk or non-dairy creamer
    splash of canola oil (or not)
    3 eggs
    1/2 cup flour
    1/3 cup packed light brown sugar
    1/2 tsp. salt
    some cinnamon (to mix into the batter and to sprinkle on top)

      I live in germany- we do not celebrate- i think this is an american thing?
      If I lived in the US i would make a big duck- it looks so yummi!
      .. it really looks soooo good- i will make those mushrooms and chicken maybe - without thanksgiving- reson :)

      Sonia where do your recipes come from, are they family recipes or your creations?? Or do u search online? I wish I was creative like that I’m always jealous when people don’t need recipes to cook lol happy thanksgiving v!

    We are un- traditional as well, each family member picks their favorite dish and we have them all for Thanksgiving. Sometimes it gets weird but everyone is always "thankful".

    I have always been traditional as were my parents and their siblings! Turkey for Thanksgiving and Ham for Christmas! Each family have their own traditional foods that we have each holiday! You recipes look wonderful! That is the maqic of the USA. We are a mixture of many different cultures!

    Love watching you! When I told my Mother I was engaged her first words were I am never cooking another Turkey again! I have been doing the Turkey for the last 37 years!😂😂😂😂 Your mushroom recipe is definitely going to appear on our table!

    When i was young, my mom was stuffing duck with apples and onions . This was very special meal for our filamily in Poland.

    Everything looks so wonderful! I am obsessed with the shape of your bread :)) I love the traditional Thanksgiving dinner, my husband and nice and nephew do not, so I make with the Turkey a small ham and lasagna with the same sides. I make the ham in the crockpot and the lasagna the day before so i still have my oven free

    We do a turkey if it’s my husband’s family we’re celebrating with. If it’s my side it’s a turkey, a ham, and tamales. We’ve only done just our immediate family once but doing something else sounds fun and tasty!

    We are untraditional. Only two of us now so we bake cornish hens with stuffing homemade.
    I think the beauty of Thanksgiving is to cook what is best for your family whatever size it is.
    Make it special no matter what your cooking. Being thankful for what & who is with you no matter how big or small your family maybe. 🥰

    Maybe suggestions for non -"turkey types"....Oh she glows : lentil-walnut loaf.
    1 cup green lentils (or 1/2 cup each green and red lentils,our preference)
    1 cup shelled, chopped walnuts
    3 TBSP s ground flaxseed
    1 tsp olive oil
    3 cloves garlic, minced
    1 medium yellow onion, finely chopped
    Sea salt
    Black pepper
    1 cup finely chopped celery
    1cup grated carrot
    1/3 cup grated peeled sweet apple(optional)
    1/3 cup raisins
    1/2 cup oat flour
    1/2 cup spelt/sprouted grain breadcrumbs
    1 tsp dried thyme/2 tsp fresh thyme
    1 tsp dried oregano
    1/4 tsp red pepper flakes (optional)
    BALSAMIC -APPLE GLAZE
    1/4 cup ketchup
    2 TBSP s applesauce/apple butter
    1 TBSP maple syrup
    Fresh thyme to garnish (optional)
    1. Cook lentils. In food processor, process lentils for few seconds into coarse paste (we simply sub red lentils which already have soft texture),leave some lentils intact for texture.
    2. Preheat oven to 325 F(260 C). Toast walnuts.set aside. Raise oven temp to 350 F(180 C). Line 9 x 5 pan with parchment paper.
    3. In large wok/pan, heat oil over medium heat. Add garlic,onion saute for 5 minutes,or until translucent. Season with salt, pepper. Add celery,carrot,apple and raisins. Saute for 5 minutes more.
    4. Carefully stir in lentils, flaxseed, walnuts,oat flour, breadcrumbs,thyme, oregano,1 tsp salt,1/4 tsp black pepper,red pepper flakes,of using. Stir til well combined and adjust seasoning to taste
    5. Press lentil mixture firmly into prepared pan. Use pastry roller to smooth and compact mixture.
    6. Make balsamic -APPLE GLAZE. In small bowl,whisk ketchup, applesauce, balsamic vinegar,maple syrup til combined. Spread glaze over loaf with spoon/pastry brush.
    7. Bake uncovered,for 50 to 60 minutes, until edges lightly browned. Cool loaf in pan for 10 minutes. Slide butter knife around edge of loaf and lift gently lift(using parchment)out of pan into cooling rack. Cool 30 minutes before slicing. May crumble slightly if sliced fully warm.

    Nut roast
    1 1/2 cups unsalted walnuts, pecans,almonds or cashews
    2 TBSPs olive oil
    1 onion, finely chopped
    4 ounces cremini mushrooms (about 6 large), sliced
    2 cloves garlic , minced
    1 can(14 ounces) diced tomatoes
    1 cup oats
    2 eggs, lightly beaten
    2 TBSPs all-purpose flour
    1 TBSP Chopped sage
    1 TBSP Chopped parsley
    1 TBSP Chopped thyme
    Salt ,pepper
    1. Preheat oven to 350 F. Spray 8 x 4 inch loaf pan with nonstick spray.
    2. Pulse nuts in food processor til finely chopped,leave some larger pieces. Transfer to large bowl.
    3. Heat oil in medium skillet over medium heat. Saute onions, garlic, mushrooms;3 minutes til soft. Transfer to bowl with nuts.
    4. Stir in tomatoes,oats, flour,sage, parsley, thyme,salt, pepper. Spoon into prepared pan.
    5. Bake 45 to 50 minutes or until firm and brown. Cool slightly before slicing.
    Side note:
    Sometimes we add add cream cheese to pan for flavor. I like garlic sour cream on side. Let me know what you like ...

    Sometimes with European roasts a veggie sauce is made. Water and veggies added to pan, veggies taken out pureed,and served like gravy.
    Parsnips,carrots, potato, tomato, peppers, garlic, onion, whiz together.
    Sour cream (non dairy) (optional)
    ___________________________________
    Pumpkin soup
    Saute chopped onions, cubed potato til soft,add corn . Add pureed pumpkin,(splash broth optional), season.
    __________________________________
    Pear flan
    Butter cookie crust, slightly prebake.
    Arrange sliced pears on top bottom of crust, squeeze lemon/orange juice over pears. Pour cream cheese mixture over, sprinkle cinnamon, slivered almonds. Finish baking.
    Apple cheesecake
    Oats, butter,sugar/sweetener mixed,pressed onto GLASS pie pan(iron will stick, scraping it off like crazy/ruin pan),pre bake 15 min.
    Pour cream cheese mixture in,top with chopped apples, walnuts. Bake half hour.

    Last year for the first time, we changed our menu and my husband prepared FILET Mignon, and a capon. Delicious! He is the BEST COOK! Never Turkey again!

    Thank you Sonya....for the wonderful ideas and recipes. Next week you will have a lot of work on Thursday Thanksgiving and on friday night the Shabat dinner. My respect to you in organizing and preparing this wonderful meals with so much care. In regards to the turkey. In this modern age. What ever works for your family is what matters. The turkey is a suggestion but not a requirement. I like the duck recipe and will do it soon. Tentatively will do cornish hens on Thursday for Thanksgiving as its only my father and my self celebrating the ocassion. Your family is very fortunate to have such wonderful and loving recipes.     Please pray for me! I’m struggling to provide for my two autistic children since losing my job over not getting the vaccine. I have pre existing health condition (Lupus) My husband passed away three years ago, so I’m all alone. Both of my sons are non verbal so things are more difficult for me. I don’t know how we are going to make it through this winter. I’m still waiting on the state for assistance. I’m so embarrassed of my situation.
    BUT NO MATTER WHAT I have Faith that God will PROVIDE! Praying we make it through the holidays.

      If you’re in the USA you can apply for emergency food stamps and also many churches have food pantries open to help families in your circumstances. I volunteer for one near me and we provide turkeys and several bags of groceries to each family. Please visit your local social service office.     We are vegan so for Thanksgiving we go for the Gardein holiday roast with gravy and it's delicious! Your cranberry apple dessert looks delicious! Thank you for sharing. Your personality is lovely and so welcoming. I love the way you express your love to your family 💜

    Capon is a very good option for Thanks giving. It's not as big as a turkey but not so dry either ( then again, it's how long you cook and season it).

    Oh Sonya! Happy Thanksgiving to you and your family too. The food looked amazing, as usual. The bread trick was wonderful and so pretty. I have my bread rising in the refrigerator right now and will bake it tomorrow. I am using your recipe and I must tell you, I have NEVER had a sourdough recipe work as well as yours did. Granted, it was a pain in the butt, but the sourdough is more bubbly and healthy than any I have ever seen, or made. We are looking forward to the bread tomorrow. You have really taught me a lot. I still haven’t gotten over the graham cracker crust with the pecan pie, and how well that went together. I must confess I have never made a duck. Yours looked so terrific that I wanted to grab some through the screen. And….no. You can eat whatever makes you family happy on Thanksgiving. It is a celebration meal and who wants food in a celebration that you don’t care for? We are going out this year for Thanksgiving. It is not a usual thing, but the 6 of us are going to see if it is more fun than staying home. I am excited to have a Thanksgiving off. I may even have a glass of wine! Thank you for your recipes. We love them.
