Higher Protein Egg Salad | Just add COTTAGE CHEESE

Makes 2 servings
Ingredients:
4 hard boiled eggs
1/2 cup cottage cheese
1 stalk celery
1/4 cup pickles
2 Tbs chopped onion
pepper, to taste
Slash of pickle or lemon juice
1 tsp dill
Directions:
Peel and chop hard boiled eggs. Add to a medium size mixing bowl. Chop celery, pickles and onion and add to the bowl.
In the carton, or in a separate bowl or blender, blend cottage cheese until smooth. This step is optional, but will give your egg salad a creamier consistency.
Add the cottage cheese to the egg mixture and add in the remaining ingredients. Mix well and enjoy!

What a good idea, but my egg salad always has to have a touch of yellow & Dijon mustards. I’m definitely going to try this. Just the other day I subbed cottage cheese in a Ranch dressing. Yum

This looks good. You can also add more protein to any kind of egg or tuna salad by using full fat Greek yogurt instead of mayonnaise… it’s delicious!
I find that Greek yogurt adds a sour cream taste! I use it in dips instead of sour cream
@@InTheKitchenWithEmily sometimes I use 2 tablespoons of Greek yogurt with 1 tablespoon of mayonnaise. I like a tart flavor but I will definitely try the cottage cheese in my next batch of egg salad.😊
